Q. We are thinking or remodeling a spare bathroom and would like to remove the bathtub and make a large walk-in shower instead. Will it still be considered a full bath?

Yes it would.  To be considered a full bath you need the following:  a sink, a toilet and either a tub or shower (or both).  The tub and shower are considered equivalent.  One thing to keep in mind for potential resale, removing all tubs may be a hindrance to buyers with small children or it the adults prefer soaking in a tub.
