This dish really goes together fast. Broiled tomato haves on the side goes very wiil with this recipe.
This recipe will scrve 4 to 6 folks
8 chicken breast halves, skinned and boned
1 1/2 cups butter or margarine
3 large cloves garlic, minced
2 tablespoons dried parsle
3 tablespoons cayenne pepper
1/3 cup fresh lemon juice
Preheat your broiler
Trim the fat and tendons from the chicken
In a medium frying pan melt 2 tablespoons of the butter over medium heat
Add the garlic and saute for one minute
Add the remaining butter parsley and 1 teaspoon of the cayenne pepper
Simmer for one minute

A very tasty fruit cobbler and very easy to make, It also not hard to clean up
1/2 cup butter or margarine
1 cup of all purpose flour
1 cup of white granulated sugar
1 teaspoon baking powder
1 cup of milk
2 cups of fruit pie filling, what ever you like the bset. I like doing apple and cherry.
2 tablespoons firmly packed light brown sugar
Preheat the oven to 350 and place the butter in an 8x8 inch baking pan
Place the pan in the oven to melt the butter

Heres a meatloal with a twist. The salsa and cheese takes it out of this world.
2 pouns of lean ground beef
1 large white onion, dice it up
2 eggs slightly beaten
3/4 cup salsa
2 cups grated sharp Cheddar cheese
4 tablespoons prepared mustard
1/4 cup dill relish
1/2 cup dry Italian bread crumbs
6 bacon strips uncooked
Preheat your oven to 375
In a large bowl combine all of the ingredients / except for the bacon strips
Mix well I just use my hands
Form the meat mixture into a large oblong loaf
Place in an ungreased 9x13 inch baking pan

This cold rice salad works very will for bunches and late suppers. Give it a shoot the next time you are making chicken or seafood kebobs.
1 cup long grain white rice, uncooked
6 tablespoons olive oil
3 tablespoons white wine vinegar
1 teaspoon salt
1 teaspoon fresh ground black pepper
1/2 teaspoon tarragon
1/4 cup diced green bell pepper
1/4 cup chopped fresh parsley
1/4 cup chopped chives
1/2 cup cucumber, cut into small cubes
1/4 cup chopped green onion
2 hard cooked eggs, sliced
2 pimientos, sliced
Cook the rice according to the package instructions
After the rice has cooked mix it at once with the olive oil, vinegar, salt, pepper and tarragon

A very good dip. Toasted bagel chips, wedges of thin pumpernickel, belgian endive spears or snow peas.
1  8 ounce package cream cheese, softened
1/3 cup of milk
5 ounces sliced smoked salmon, cut into pieces
2 tablespoons fresh lemon juice
1 tablespoon dried dill
 In a blender or food processor puree all the ingredients until very smooth
Cover and chill for at least 1 hour
Will make about 1 1/2 cups

This fast and tasty recipe should be garnished with a sprinkle of chopped chives, red pepper strips.
1 dozen fresh dinner rolls, split
3/4 cup butter
1 1/2 cups grated American cheese
3 tablespoons finely minced white onion
1  7 ounce can crabmeat drained
salt and fresh ground black pepper to your taste
Arrange the roll halves onto 2 lightly buttered cookie sheets
In a medium frying pan melt the butter over medium heat
Add the American cheese, onion and cabmeat
Cook until well combined and the cheese is just melted
Remove from the heat and season with the salt and black pepper
Spread the mixture over the 24 dinner roll halves

Be sure you use a fulley ripe banana. I've seen folks that did not like cole slaw go for a second helping of this one.
2 cups shredded cabbage
1/2 cup brated carrot
1/2 cup diced greeb bell pepper
1 cup crushed pineapple well drained
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/2 cup sour cream
1 large ripe banana
a dash of paprika
In a large bowl combine the cabbage, carrot, green pepper, pineapple, salt and black pepper.
Add the sour cream and mix lightly.
Cover and chill at least 2-3 hours.
At service time peel and dice the banana.
Fold into the cabbage mixture.
Garnish with paprika.
Serve on cold plates.

Kiwi Fruit Melon Salad - 10/12/07 06:16 PM
You can easily double or even triple this recipe and pass it around the room at any potluck supper.
3/4 cup mayonnaise
2 tablespoons sugar
3 tablespoons fresh squeezed lemon juice
1/3 cupshredded sweetened coconut
1/2 teaspoon salt
1 cup honeydew melon balls or ( you can cut in to bite size pieces )
1 cup watermelon balls or ( you can do the the same as above )
4 kiwi fruit, peeled and sliced
1/2 cup chopped walnuts
In a large bowl combine the mayonnaise, sugar, lemon juice, coconut and salt.
Gently add the kiwi fruit and melon to the mayonnaise mixture.
Toss lightly to coat evenly.
Cover tightly  and refrigerate until well chilled.

Squeeze cloves onto polenta slices or grilled French bread slices.
1 full bulb garlic
1/4 teaspoon olive oil
A dash of salt
A dash of paprika or more
Slice off the top of the garlic bulb to expose all the clove tops. Place bulb on a sheet of aluminum foil and drizzle the olive oil into each of the exposed tops. Sprinkle with a dash of paprika and salt. Wrap the foil tightly around the bulb. Place on the barbecue grill at medium heat for 20 to 25 minutes.
