I've lived/worked in the desert for a good long time now, and you'd think few of the 'critters' indigenous to it would get much of a rise out of me.
Then again, I practically own stock in the local pest control company.
The sun spider, camel spider or wind scorpion (from the Solifugae order of arachnids) do indeed come out of hiding when the winds pick up here in Fort Mohave.

Store-bought, they are expensive and full of added salt and preservatives.
But they are inexpensive and super-delicious when bought fresh and fire roasted, then skinned.
My Gramma taught me an easy way to roast and skin chili peppers for chiles rellenos, salsa or omelets:
