 While my parents were visiting this last weekend, we cooked up a big German dinner.Sausages, red cabbage and my home made spaetzle!



Mom had brought along some great Wisconsin beer, Leinenkugel, which is one of my favorite beers.  The meal turned out fabulous and the beer made the perfect pairing.
Mmmm, Mmmm, Mmmmm, a German food coma followed close behind this meal.   Ha!

Now, you would think that since this post is for November 13, a Sunday, that this post will be all about my beloved Broncos (who actually played well this weekend!) or my old time favorites, the Vikings (who blew Monday night football this week). I’m just going to flat out admit it, I love arts & crafts!  Anything from jewelry design to knitting (my dad just taught me to knit this last weekend and I'm loving it!) to quilting to hand-crafted greeting cards… the list goes on and on.  If it involves a trip to the craft store and a table covered in artsy supplies, I’m in heaven.
A couple years ago, my mom taught me how to design and craft beaded jewelry with wire wrapping techniques.  While she was visiting last weekend we took a couple hours to break out the beading supplies … (4 comments)

Brrrrrrrrr…. It’s been cold in Colorado!  But that hasn’t stopped me from going for numerous winter walks with the doggies, and my visiting parents.  As my parents were preparing for their visit last weekend, I told them to pack warm clothes as it’s going to be full-on winter in the mountains.
They did, and we were able to spend a good amount of time outside despite the cold temps, wind and snow.  The dogs love it, and so do I.  Winter walks are so refreshing.  I love the way the winter air makes my cheeks rosy.  And I love the warmth … (4 comments)

Today I’m thankful for my Mom & Dad.
They drove all the way from South Dakota out to Colorado to pay us a visit this weekend.  I love my parents and am thankful beyond words for all they’ve done for me in my lifetime to make me the woman I am today.  They’re just plain great!
This trip was so much fun with them.  They came toting a cooler full of good SD beef steaks and a roast, wine and Wisconsin beer, home made cookies and their Italian ravioli pan to make home made raviolis.  Can you tell we’re a cooking … (2 comments)

Today I’m thankful for GOALS.
A Goal is a Dream with a Deadline.  Well, at least that’s what my Father-in-law always says.  And I fully agree with him. 
Without goals I’d just be plugging along day after day with no sense or purpose.  And then, before you know it, a week has gone by, a month, a year or more and what accomplishments do you have show?  If you’re a goal-setter, I bet you have a list of accomplishments!

Thankful for Thankfulness?  Well, that seems silly when I type it out like that.  But it’s true!
Out of the blue today I received a thank you note from my cousin and god-mother, Kathy.  We had seen each other about a month ago at a girls-only family reunion.  And we had a blast together!

I absolutely LOVE daylight savings time when it’s time to “Fall Back”.  Waking up Sunday morning, thinking it was 7:30am and it was really 6:30am meant that I just gained an hour in my day!  A whole extra hour to do with whatever I want!  Love it!
Though the sun sets earlier now, and when I leave work it is dark outside, the mornings are brighter and a little warmer.  Living in the mountains in the winter, I’ll take any extra warmth I can get.

Last winter, I read the book The Art of Racing in the Rain by Garth Stein.  If you haven’t read this book, quite simply, put it on your list.  This story of the life of one man is told through the eyes of his dog, Enzo.  Enzo is convinced, through the education of watching television while his owner is away, that when he dies he will be reincarnated as a human.  Enzo is wise beyond his dog-years and form, and he reminds me so much of my old-soul lady dog, The Zutnik.

Prime. Rib.
That’s what inspired this post.  My roommate, Jon, cooked a prime rib roast to perfection and served it up with sautéed asparagus and smashed red potatoes.  Washed down with a tasty Tempranillo, this meal put an exclamation point on a beautiful snowy day.
But it isn’t just the food that I am thankful for.  I am thankful to share this home-cooked meal with my husband and good friend.  Sitting down to a great home cooked meal is something that I will always be thankful for.

Today I finished a wonderful book, The Help by Kathryn Stockett.  You know that feeling when you read the first paragraph of a new book and you’re instantly transported to another world?  It doesn’t happen often, but when it does… BAM… you just can’t put the book down. 
The Help did this to me, from the first sentence.  The book is told from the first person perspective of three women, living in Jackson, Mississippi in the midst of the civil rights movement. GOOD HEALTH
Living in the Vail Valley I am surrounded on a daily basis by healthy, active people.  It is so encouraging each day to see people carrying their mountain gear…skis, kayaks, bikes, climbing equipment… heading out to have fun active mountain adventures.  I feel so blessed to live in this great state.  And today I am thankful to have good health and the ability to enjoy all the activities that the Colorado lifestyle allows.
