Coal Region Hot Bologna Recipe
This post is dedicated to Chris Ann Cleland, who has roots here in the Anthracite Region of PA and who is visiting here tomorrow on a pilgrimmage. I hope she stops by and sees me in person, and we get to spend some time together.
Coal region aficionadios know that Hot Bologna is one of our specialties. You can buy it at many outlets (Miller's Hot Bologna is the regional favorite) but some of us choose to make our own. Here you go Chris Ann, for when you're down in Virginia and have a craving.
For the ring bologna I choose to buy the garlic spiced kind and I use a bunch of red pepper flakes or crushed red pepper.
COAL REGION RING BOLOGNA
Take 1 ring of garlic ring bologna and slice. Place in glass bowl or jar.
I place it in a glass bowl until it is finished then transfer to mason jars.
Add 2-3 tbsp crushed red pepper (the more the spicier!) and 1/4 tsp salt.
Pour 1.5 cups of white vinegar and 3/4 cup of water over the bologna.
Shake and mix. Refrigerate and let sit for at least 2 days.
