My Saturday Foodie Post - Grilled Chicken with Corn Salsa - 04/30/11 01:56 PM
This is an easy and yummy kind of south of the border inspired dish. What you'll need: Boneless skinless chicken breasts Enchilads/ranchero sauce - the stuff in the can (I suppose you could get REALLY inspired and make your own...but why?) Frozen corn Red Pepper Red Onion Cilantro Mixed greens Black beans Queso fresco or feta cheese Lime Poke a few holes in the chicken breasts. Set them aside then take the prepared enchilada sauce and put in a zip lock bag. Now place the chicken breasts in the bag, seal tight and let the enchilada sauce

One of the EASIEST and yummiest ways to cook a roast! - 04/27/11 07:41 PM
I promise you, this roast comes out juicy and tender every single time. Ooooh so easy and absolutely no fuss! You'll need just two ingredients. A Boneless chuck roast (3-5 lbs), and a packet of onion soup mix. Take the chuck roast and place it on a large piece of heavy duty aluminum foil. Take the packet of onion soup mix and sprinkle it over the roast. Seal up the aluminum foil VERY TIGHTLY to prevent any leaks. Place the wrapped roast in a roasting pan. Cook for 4-5 hours in a 300 degree oven. This comes out juicy and fork

Can the seller make repairs to the house before closing? With the amount of foreclosed properties out there, it's not unusual to see many homes in need of some cosmetic repair. The previous owner may have left the home they vacated in a less than desirable or "move in ready" condition. I've seen homes where appliances were removed, carpets were left in filthy condition and even graffiti on the walls. Well, I didn't win the recipe contest, but it sure was fun cooking with the chef up in the Portland area a few weeks ago. I made this at home again the other night so figured I'd post the recipe again with a photo. Cod fillets (really any white fish would work, I just happened to have these on hand.) "Thai-ish" Salmon over rice noodles - 04/12/11 08:44 PM
I think I have a new favorite way to prepare salmon! So I got home from work last night and pulled out a few salmon fillets. How to prepare them was the question. So, I started going through the pantry and fridge to get inspired. Out from the pantry came rice noodles and some peanuts. From the fridge came some red cabbage, matchstick carrots, green onion, cilantro, Yoshida marinade and some Thai Sweet Chili Sauce. Cracked pepper and salt went onto the fillets which were then placed in a baking dish. On top of the salt and pepper they got a drizzling

My Saturday Foodie Post - A day early - Tacoless Fish Tacos - 04/08/11 02:34 PM
I'll be traveling tomorrow so figured I'd toss this one out there today. Heck, it IS Friday, and Friday's are Fish days, right? I pulled out some cod from the freezer the other night and was trying to get inspired as to what to do with it. I was kind of in a "Mexican food mood", but didn't want anything real heavy or rich. So Tacoless Fish Tacos is what I came up with. How will the Government shutdown impact my new loan? This may be a question on anyone's mind who is in the midst of obtaining an FHA, VA, or USDA loan. At the time of the writing of this blog, it's uncertain as to the level of impact this may have, but there are definitely concerns. It's certainly possible that the impending shutdown could effect the ability to obtain CAIVRS, FHA case numbers, VA loan numbers and USDA conditional commitments through the appropriate governmental systems. Don't let the title fool you. This isn't really a "Holiday" dish, per se, that's a name my mom came up with, merely because of the green pesto and red tomatoes used. This is one of the easiest dishes ever and everyone I have made it for just loves it. It's particularly nice for company, as it's something you can easilly prepare ahead of time, let cook slowly, which allows you time away from the kitchen, allowing you to visit with your guests.
