Since the holidays are right around the corner (yippee!), I know many of us will be doing a great deal of baking. Here are some quick tricks in the kitchen that can save preciuos time.
Prep on your own schedule. Most types of cookie dough will keep in the freezer for four to six weeks if you double-wrap it tightly in plastic wrap. Thaw before baking.
Grease your measuring cups before measuring syrupy ingredients like molasses-- a little nonstick cooking spray helps thick liquids pour easily.
Line your cookie sheet with parchment paper or a baking mat. Cookies won't stick, so cleanup will be speedy.
Cut up butter so it will reach room temperature faster. A whole stick may require 45 minutes, small cubes will just take 15 minutes or so.
Take your oven's temperature. Oven heating is surprisingly variable. Check yours with an oven thermometer to make sure it reaches the temperature needed for your cookies and cakes.
ENJOY!!

Recently, I read an article in HSUS' "All Animals" Magazine about Alvaro Munera. He battled bulls before cheering audiences for 6 years. Then, at the age of 18, a fight turned against him, and he lost the use of his legs. Soon after this tragic event, his closest friend died from bullfighting injuries.
These experiences did not make Munera bitter. Now 43, he has devoted his life to rescuing animals in his hometown of Medellin, Columbia, and speaking out against the blood sport that was once his passion. He is joining Humane Society International in January to tackle Mexico's bullfighting industry.
This will be the first time an ex-bullfighter has come to Mexico to speak up for the rights of animals. His visit will hopefully reinforce the ethics of the new generations, and it will mean invaluable support for legislators who are against bullfighting.
On a personal note, I studied in Madrid, Spain for 6 months in college. It was one of the best experiences of my life. I never could force myself to watch a bull fight, no matter what the cultural outlook was at the time.
I commend Alvaro Munera in his strong stance on this issue, and someday, hope this tradition/sport ends as well!

Being from Wisconsin, I love my cheese!!! Here is a great tip:
Don't fear if hard cheese has molded in spots. Just slice off an inch past the questionable bits. If the whole piece is past its prime (or if it's a soft cheese), toss everything but the rind, especially from hard cheeses like parmesan, pecorino or gruyere. Simmer these rinds in soups or stews when you want an extra burst of flavor. Yum!!!

Dairyland Greyhound Track in Kenosha, the state’s last pari-mutuel greyhound racing track in the state, will close at the end of the year.
The announcement was made on Tuesday to employees. The track opened on June 20, 1990.
"It’s a sad day for the Dairyland family and Kenosha community,” Roy Berger, Dairyland executive vice president, said in a press release. “We looked at every opportunity to apply for racing dates in 2010, but there was no longer a way to remain a viable entity."
Berger said the ownership group would now focus on helping the track's 180 employees "transition to new jobs and helping our kennel owners and operators work in conjunction with the State of Wisconsin to find homes for the racing greyhounds either at other racetracks or through an adoption group."
At one time there were five greyhound tracks in the state. The others were the Geneva Lakes Kennel Club; the Fox Valley Greyhound Park in Kaukauna, the Wisconsin Dells Greyhound Park in Lake Delton and the St. Croix Meadows Greyhound Racing Park in Hudson.
When the tracks first opened, people flocked to them. There were more than 3.5 million visitors in 1991, the first year all five tracks were open. But then attendance began dropping steadily in the 1990s.
Dairyland said it lost $3.4 million last year The track also has reported losses to the state of $2.82 million in 2007, $2.84 million in 2006 and $2.41 million in 2005.
Dog tracks opened in Wisconsin after voters in 1987 approved a constitutional amendment allowing the creation of a state-run lottery and legalizing pari-mutuel betting. In 1991, a federal judge ruled that because Wisconsin now had a lottery and legalized betting at greyhound tracks the state also had to let Indian tribes open casinos.
The ownership group is expected to continue efforts to support the application of the Menominee tribe to build a $1 billion casino on the grounds of the track.
The closing of the tracks follows a national trend of greyhound tracks closing, a victim of changing tastes and the ability of casinos, many of them owned and operated by Indian tribes, to attract gamblers.
The Menominee are continuing to pursue a lawsuit against the federal government, challenging a denial of the project that was issued in the final days of the Bush administration.
Greyhound adoption groups say they expect hundreds of dogs to be available for adoption. The groups, spread around the Midwest, have had experience before in finding homes for the greyhounds.

I received this action alert today from Peta...please read and help us help them!!
Dear Kristin,
When PETA found out that ShopRite was selling glue traps—one of the cruelest pest-control devices on the market today—we contacted the company and let it know that animals who get stuck to them suffer for days before they finally die of starvation, dehydration, self-mutilation, and shock. Patches of skin, fur, or feathers are torn off their bodies as they frantically struggle to escape the relentless adhesive.
But so far, this has not persuaded ShopRite to do the right thing and get rid of the traps once and for all, nor has the fact that other companies—including CVS, Rite Aid, Albertsons, Safeway, and most recently, Dollar General—have banned glue traps because they are so cruel.
We need you to speak up for the rats, mice, and other animals who sometimes try to chew off their own limbs in a desperate attempt to free themselves from these cruel devices. Please write to ShopRite now and demand that it stop selling glue traps today!
Thank you for your support and for speaking up for rats, mice, and other animals.Sincerely,
Tracy Reiman Executive Vice President PETA
