When and How To Salt Foods Correctly! - 09/25/10 09:52 AM

Enhance the natural taste of your ingredients, not the saltiness, by adding a pinch at these key stages:
 
1.  When sweating vegetables.  Salt draws moisture from food, helping it break down, unlocking the flavor.
2.  Before grilling or cooking meat.  Give it a healthy sprinkling.  Salt helps uncoil the proteins, bringing out the natural juices.
3.  After adding dairy.  Cream and unsalted butter counteract salt.  Try adding a little extra to a n oversalted dish to save it.
4.  With sweets.  It makes desserts and sweet foods, like watermelon, taste even better.

It is no secret that resting cucumber slices on your eyelids can reduce dark circles and puffy skin.  However, did you know that potato slices are just as effective, thanks to an enzyme called catecholase.  Also, the spuds keep longer in your pantry, so you are more likely to have one around.  Next time, try treating sleepy peepers with this trick :-) BONUS----cut 2 1/2 inch thick rounds from a potato.  Lie back and place a slice on each closed eye for 10 to 20 minutes.  To get even more benefits, grate the potato and bundle the shreds in cheesecloth, then … (18 comments)
