Purple and white eggplants from my Haiku Maui garden For a while at the end of summer my eggplants were going off! This year we even had some white ones that did well. They come in a lot of shapes and sizes and colors too. Here in Hawaii the long purple eggplant can be found in most markets. I wouldn't say eggplant is my favorite vegetable to eat, but they are fun to grow and they look so beautiful when they are all shiny and plump.
