Ingredients:

3 medium ripe avocados peeled, cored and mashed

1 bunch green onions, chopped

2 medium tomatoes, chopped 

2 tablespoons lemon juice

1/2 teaspoon salt

1/4 teaspoon pepper

1/2 cup mayonnaise

1 cup sour cream

1 package taco seasoning

2 cans bean dip

1 can black olives (3 oz) Chopped or sliced

1 8oz. package shredded Cheddar Cheese

 

Directions:

  Mix avocados, lemon juice, salt, and pepper.

  Mix mayonnaise, sour cream, and taco seasoning mix.

  Layer ingredients as follows.

  Bottom layer: Bean Dip.

  Second layer: Avocado mixture.

  Third layer: Sour cream mixture.

  Fourth layer: Tomatoes.

  Fifth layer: Onions.

  Sixth layer: Olives.

  Seventh layer: Cheese (I like to use Colby Jack cheese).

  Top with extra sour cream/olives/salsa, etc. if desired.

  Serve with tortilla chips.

NOTE:  Best if chilled for a few hours or over night.

 

 

Ingredients

1 cup all-purpose flour
2 teaspoons salt
1 teaspoon granulated garlic
1 teaspoon ground black pepper
1 teaspoon onion powder

Two (5-ounce) round steaks
Buttermilk
4 ounces whole butter
Country Gravy

Directions

Mix flour, salt, garlic, pepper and onion powder together to make seasoned flour mixture.

Tenderize steaks by running through a meat tenderizer or beating with a hand meat tenderizer. Soak in buttermilk briefly and then dip in seasoned flour mixture.

Heat butter in saute pan on medium high heat. Place breaded steaks in pan and cook until golden brown and tender. Approximately 10 minutes per side.

Serve with Country Gravy.

 

Country Gravy:
1 medium garlic clove, minced
2 ounces bacon grease
4 ounces all-purpose flour
1 cup heavy cream
1 cup water
Black pepper, to taste
Kosher salt, to taste

 

Brown garlic in the bacon grease. Stir in flour until smooth. Let roux (grease and flour) cook lightly for a couple of minutes stirring frequently. Add cream and water stirring constantly. Simmer until gravy thickens and is hot. Season with salt and pepper, to taste.

The is a refreshing cool dessert for a warm summer day.

 

Ingredients:

  1 prepared cookie pie crust

  1 (6 ounces) contaner orange yogurt

  1 (3-1/2 oz) package vanilla instant pudding mix

  1/4 cup powdered sugar

  6 oz cream cheese, softened

  1 (8 oz) container whipped topping, softened

  2 (11 oz) cans Mandarin oranges

Directions:

In medium bowl, mix together yogurt, pudding mix, and sugar. Beat in cream cheese, half of the whipped topping, and juice from oranges. Spoon into crust. Arrange oranges on top. Spread remaining whipped topping over oranges. Refrigerate until ready to eat.

 

 

 

Ingredients:

  1 Store bought Angel food cake or angel food cake mix

  Blueberries (canned or frozen)

  cool whip

 Directions:

 If making from cake mix follow directions on box.  Warm up blueberries and pour over angel food cake. and top with cool whip.  This is a delicious dessert and easy to make.  Or you can use strawberries and cool whip.  Mix strawberries with sugar and alittle water.  Then pour over cake and top with cool whip.  This dessert is great for the summer. 

 

 

 

 This is a quick and easy recipe to make.  Enjoy!

Ingredients:

  1 jar spaghetti sauce (any flavor)

  1 box lasagna noodles

  1 12- or 15-oz. container of ricotta cheese

  2 eggs

  1 16 oz. of shredded mozzarella


  2 lbs of ground beef

 

Directions:

Preheat oven to 350. Mix ricotta cheese and two eggs with a fork in a bowl. Cook and drain lasagna noodles While pasta is cooking, cook ground beef and drain. Add jar of spaghetti sauce to ground beef in skillet. In a 13x9" baking dish start to layer: First put 1/3 of the lasagna noodles down, spread 1/2 of the ricotta mixture over noodles. Second spread 1/3 of the meat mixture, then top with 1/3 of the mozzarella cheese. Repeat as before for middle layer. For the top layer, add remaining noodles, meat, and mozzarella cheese. Bake at 350 until the cheese is melted, about 20-25 minutes.

 

Ingredients:

  1 package baby carrots

  3 lb boneless top round roast

  1 large yellow sweet onion

  5 medium potatoes

  8 cups beef broth

  1 large can cream of mushroom soup

  1 Tbsp salt

  1 Tbsp pepper

  1 Tbsp garlic powder

  3 bay leaves

 

Directions:

Mix together cream of mushroom soup and beef broth and pour in slow cooker. Add salt, pepper, garlic and powder, mix well. Chop onion and cube potatoes with or without the skin.  Place roast in crock pot, add liquid.  cook on high all day.  Add carrots, chopped onion, and cubed potatoes about 1-2pm. Cook on high until serve. Using two forks, shred warm roast beef and add to stew.  This is a great meal. 

 

 

 

     Ingredients:

  8-10 medium white potatoes

  1 stick salted sweet butter

  2/3 cup sour cream

  1/2 cup mayonnaise

  1/3 cup whole milk (if needed for a creamy mashed potato)

  Salt and pepper, to taste

  2 Tbsp chives, minced

 

      Directions

  Peel, dice, and boil potatoes until tender, then drain. Add butter to potatoes immediately while still hot. Mash potatoes by hand or mixer to near desired consistency. Add sour cream and mayonnaise and mix. Add salt, pepper, and chives to taste and mix. Add milk if necessary.  Number of servings: 10-12

 

         Ingredients:

  2 cups semi-sweet chocolate morsels

  2 cups of milk chocolate morsels

  2 cups pecan halves

        Directions:

  Over double boiler, melt chocolates together.  Pour over pecan halves. Using a tablespoon drop onto parchment lined cookie sheet. Allow to cool.

  Note:  If you like coffee flavor, add 2 teaspoons instant coffee to the melted chocolates, then pour over pecan halves.

 

 

 

      This is a light and refreshing dessert.    Great to make for summer.

  Ingredients:

  1 box sugar-free Jell-O flavor of your choice

  1 (8 ounce) container soft cream cheese

  1/2 cup sour cream

  1 cup whipping cream

  2 teaspoons Splenda

  Directions

  Prepare Jell-O as directed on box. When almost set, beat with an electric mixer until thick and creamy. Beat in cream cheese and sour cream. Beat whipping cream and Splenda until soft peaks form. Fold into Jell-O mixture, allowing to marble. Spoon into dessert dishes and chill for 2 hours. Number of servings: Serves 8
