&lt;p&gt;&lt;strong&gt;In addition to visiting the Monterey Bay Aquarium, Cannery Row and Carmel Mission last weekend, another area of the Central California Coast visited, was &lt;a href=&quot;http://www.capitolavillage.com/&quot; target=&quot;_blank&quot;&gt;Capitola&lt;/a&gt; and the nearby &lt;a href=&quot;http://www.beachboardwalk.com/&quot; target=&quot;_blank&quot;&gt;Santa Cruz Beach Boardwalk&lt;/a&gt;.&lt;br /&gt;&lt;/strong&gt;&lt;br /&gt;We arrived fairly early in the quaint village of Capitola, with its Venetian multi-colored cottages, shops, and restaurants.&amp;nbsp; The plan was to spend a little time soaking up a little morning sun on the beach, and then move north a few miles to Santa Cruz, when the Boardwalk woke up at Noon.&lt;br /&gt;&lt;br /&gt;Right away, I noticed an unusually high number of people on the beach. And yes - in the water!&amp;nbsp; The surfers in one area numbered easily more than 50.&amp;nbsp; And with their slick black wetsuits they looked like seals frolicking in the surf.&amp;nbsp; &lt;br /&gt;&lt;br /&gt;Children were building forts out of driftwood accumulated on the beach.&amp;nbsp; Dogs were leaping to catch a myriad of Frisbees, balls and sticks sailing through the air.&amp;nbsp; But more noted were the hundreds of people all bundled up, and doing nothing but looking at the ocean.&amp;nbsp; We soon discovered Santa was about to arrive, which explained the increased population and happy mood that prevailed. &lt;br /&gt;&lt;br /&gt;It wasn't long out on the horizon we could see an outrigger with a bearded, red festooned character headed our way.&amp;nbsp; &lt;br /&gt;&lt;br /&gt;After the grandkids managed a visit with&amp;nbsp;Mr. Claus&amp;nbsp;we headed to Santa Cruz - the land of roller coasters, carousels, arcades, salt water taffy and salty fresh air.&lt;/p&gt;&lt;div class='agent_signature'&gt;&lt;p&gt;&lt;img src=&quot;http://www.webstarmagic.com/realtor/images/myrl_jeffcoat_signature2.gif&quot; alt=&quot;&quot; width=&quot;179&quot; height=&quot;63&quot; /&gt;&lt;/p&gt;&lt;/div&gt;</description>

&lt;p&gt;&lt;br /&gt;&lt;strong&gt;These last couple of years of economic woes have caused credit problems for many folks lately.&amp;nbsp; Some have experienced bankruptcy or foreclosure - still others are late on payments.&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;But if you are one of the millions out there with bad credit, there are several things you can do to improve your position.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;(1)&amp;nbsp; One of the quickest and possibly best methods is to obtain and use a secured credit card to generate quick positive history on your credit report.&lt;/strong&gt;&amp;nbsp; A secured credit card reports very much like a regular credit card, but is easier to obtain because, you are essentially placing funds into the account as a deposit.&amp;nbsp; All you need is a job, and the ability to make payments to the card.&lt;/p&gt;

&lt;p&gt;The bank secures itself by holding the deposit from you, which is equal to your credit limit of the account.&amp;nbsp; The lender will take the amount you owe from the deposit should you default.&amp;nbsp; However, if you upgrade to an unsecured card, or cancel, your deposit is returned to you.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;(2)&amp;nbsp;&amp;nbsp;Another simple way to enhance your FICO score is by reducing your limit to balance ratios on any credit accounts you may have.&amp;nbsp; &lt;/strong&gt;50% is the magic number that you need to work toward.&amp;nbsp; To provide an example, if you have a $5,000 limit, you need to try to reduce that to no more than $2500 on your balance.&amp;nbsp; Your FICO score will drop anytime you go over this ratio.&lt;br /&gt;&lt;br /&gt;You can reduce a balance fastest by either paying down your balance or calling the lender and asking them to provide you with a credit line increase.&amp;nbsp; If this doesn't work, you can distribute balances to other cards keeping all balances to limit ratios less than 50%.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;(3)&amp;nbsp;A less effective credit repair tools that can still be useful, is labeled the piggyback method.&lt;/strong&gt;&amp;nbsp; To implement this tool you will need to have a relative or close friend with excellent credit, and credit account(s) with a low balance to limit ration.&amp;nbsp; If your relative/friend is willing to add you as an authorized user, this can help infuse positive history on your credit report.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;But, it is important to understand that if your relative or friend suddenly starts paying late, it may reflect on your credit as well.&lt;/strong&gt;&amp;nbsp; So be certain the person you ask for help with this credit improvement method is strong financially.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Last and not least, should you use a relative or close friend for this method, be just as certain to respect the assistance they have provided you.&amp;nbsp;&lt;/strong&gt; Make sure you are timely with your payments, and are honoring any agreements you made with them.&amp;nbsp; After all, to not do so, not only will lose any good credit hopes you wished to obtain, but will likely lose you a valuable relationship as well.&lt;/p&gt;

&lt;p&gt;There is a jewel along the Monterey-Carmel coastline in California, that shouldn't be missed.&amp;nbsp; It is the &lt;a href=&quot;http://www.californiamissions.com/cahistory/sancarlos.html&quot; target=&quot;_blank&quot;&gt;Mission San Carlos Borromeo at Carmel&lt;/a&gt;.&amp;nbsp; Father Junipero Serra founded the mission in June of 1770.&amp;nbsp; Originally the mission was established on the site of the present presidio Chapel in Monterey.&amp;nbsp; However a year later Father Serra with a group of Indians moved the mission to its present location five miles away in the Carmel Valley - on the other side of the peninsula from Monterey.&lt;br /&gt;&lt;br /&gt;Of the 21 missions, of the California Mission chain, the Carmel mission was Father Serra's favorite.&amp;nbsp; He is buried in the floor of the alter there.&amp;nbsp;&amp;nbsp;Mission San Carlos Borromeo&amp;nbsp;was also the second mission in the chain to be founded.&lt;br /&gt;&lt;br /&gt;This past weekend, when my daughter, and two of my grandkids visited there, I was able to capture&amp;nbsp;many of the scenes that make this mission one of my favorites as well.&amp;nbsp; The structures are not as large as some of the other missions - especially the beautiful Santa Barbara mission; but the details and quaint intimacy create a special warmth that cannot be denied.&lt;br /&gt;&lt;br /&gt;The missions of California, were established by the Spanish, during the period of this state's history that predated the more raucous antics of the California Gold Rush which began in 1849.&lt;/p&gt;&lt;div class='agent_signature'&gt;&lt;p&gt;&lt;img src=&quot;http://www.webstarmagic.com/realtor/images/myrl_jeffcoat_signature2.gif&quot; alt=&quot;&quot; width=&quot;179&quot; height=&quot;63&quot; /&gt;&lt;/p&gt;&lt;/div&gt;</description>

&lt;p&gt;When folks from out of state begin planning a California family vacation, one of the first places they often think of is Disneyland.&amp;nbsp; However, if they are fortunate enough to make their way to the Central California coast, there is another place that provides a different sort of Fantasyland, which isn't usually seen unless vision is allowed to break surface.&lt;br /&gt;&lt;br /&gt;Over this past weekend, I spent a few hours with family at the &lt;a href=&quot;http://www.montereybayaquarium.org/&quot;&gt;Monterey Bay Aquarium&lt;/a&gt;.&amp;nbsp; Even to my old jaded eyes, the wonder of all things great and small, dwelling in a watery environment creates special delight.&amp;nbsp;&amp;nbsp; There were Sea Otters, Jelly Fish, Sharks, Sea Horses, Anemones, Star Fish and&amp;nbsp;Bat Rays.&amp;nbsp; My grandkids enjoyed petting the Rays with their velvety skin.&lt;br /&gt;&lt;br /&gt;Prior to a week ago, the aquarium played host to a Great White Shark.&amp;nbsp; However, she was eating far too many of her roommates, and had to be released back into the wild.&lt;br /&gt;&lt;br /&gt;Still, the aquarium&amp;nbsp;presents many delightful things to see.&amp;nbsp; Imagine for a minute, that you are standing with the group of people in front of that giant glass enclosure, looking at the multiple thousands of anchovies swimming swiftly in a school.&amp;nbsp; Out of nowhere arrives a big shark at lightening speed right at them.&amp;nbsp; The school creates a large hole in its midst as the shark swims through.&amp;nbsp; We are only left to ponder how many anchovies were part of that dinner.&amp;nbsp; Alas, I missed the shot!&lt;/p&gt;

&lt;p&gt;&lt;strong&gt;The photo above was taken at my house awhile ago.&lt;/strong&gt;&amp;nbsp; In just a few short hours my family will begin to gather from hither and yon for Thanksgiving dinner.&lt;br /&gt;&lt;br /&gt;I wanted to take this opportunity to share one more recipe before the holiday.&amp;nbsp; There will be 14 of us celebrating the big day.&amp;nbsp;&amp;nbsp; Here's a different twist for potatoes for a special meal.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;br /&gt;Carolina Low Country Potatoes&lt;/strong&gt;&lt;/p&gt;
&lt;ul type=&quot;disc&quot;&gt;
&lt;li&gt;&lt;strong&gt;9 - 10 medium - large Irish/Russet potatoes &lt;/strong&gt;&lt;/li&gt;
&lt;li&gt;&lt;strong&gt;1 medium to large Yam &lt;/strong&gt;&lt;/li&gt;
&lt;li&gt;&lt;strong&gt;Milk (enough to mash all potatoes) &lt;/strong&gt;&lt;/li&gt;
&lt;li&gt;&lt;strong&gt;Sour Cream (about 1/2 pint for this amount of potatoes) &lt;/strong&gt;&lt;/li&gt;
&lt;li&gt;&lt;strong&gt;Grated Cheddar Cheese (about 1 cup for this amount of potatoes) &lt;/strong&gt;&lt;/li&gt;
&lt;li&gt;&lt;strong&gt;Chopped Green Onions &lt;/strong&gt;&lt;/li&gt;
&lt;li&gt;&lt;strong&gt;Caraway Seeds (probably about 1 tsp, or so) &lt;/strong&gt;&lt;/li&gt;
&lt;li&gt;&lt;strong&gt;Fennel Seeds (probably about 1 tsp, or so) &lt;/strong&gt;&lt;/li&gt;
&lt;li&gt;&lt;strong&gt;Dash of Cinnamon (optional) &lt;/strong&gt;&lt;/li&gt;
&lt;/ul&gt;

&lt;p&gt;If you have heard of &lt;a href=&quot;http://www.folsom.ca.us/&quot; target=&quot;_blank&quot;&gt;California's Folsom&lt;/a&gt;, then you probably became aware of it&amp;nbsp;while listening to&amp;nbsp;a 1956 Johnny Cash song titled, &quot;Folsom Prison Blues.&quot;&lt;br /&gt;&lt;br /&gt;The rich history surrounding Folsom began in the California Gold Rush days about 1849 or so, and with the arrival of the railroad.&amp;nbsp; Gold had been first discovered along the south bank of the American River in the area.&amp;nbsp; Because of the discovery, rail service became important.&lt;br /&gt;&lt;br /&gt;Folsom is conveniently located along Highway 50 about 12 miles east of&amp;nbsp;Sacramento.&lt;/p&gt;

&lt;p&gt;My oldest daughter is a vegetarian, so you can begin to see what is involved while cooking up a Thanksgiving feast at my house.&amp;nbsp; However, there is one particular soup that they ALL seem to enjoy.&amp;nbsp; &lt;br /&gt;&lt;br /&gt;Here's the recipe:&lt;/p&gt;

&lt;li&gt;1 Butternut Squash - peeled, cut in chunks, steamed or baked&lt;/li&gt;
&lt;li&gt;1 Pumpkin (small) - prepared the same as the Butternut squash, or can substitute canned.&lt;/li&gt;
&lt;li&gt;&amp;frac12; Cup Peanut Butter (smooth)&lt;/li&gt;
&lt;li&gt;1&amp;nbsp; 14oz can Coconut Milk&lt;/li&gt;
&lt;li&gt;2 &amp;nbsp;14 oz cans Chicken Broth&lt;/li&gt;
&lt;li&gt;1 Tablespoon Ginger - grated&lt;/li&gt;
&lt;li&gt;1 stalk Lemon Grass - cut into 3&quot; - 4&quot; lengths&lt;/li&gt;
&lt;li&gt;Anistars (1 or 2)&lt;/li&gt;
&lt;li&gt;1 tsp. Cinnamon&lt;/li&gt;
&lt;li&gt;1 Tablespoon Garam Masala &lt;/li&gt;
&lt;li&gt;&amp;frac12; tsp. Nutmeg&lt;/li&gt;
&lt;li&gt;1 Tablespoon Allspice&lt;/li&gt;
&lt;li&gt;1 Tablespoon Curry Powder&lt;/li&gt;
&lt;/ul&gt;
&lt;p&gt;&lt;strong&gt;Preparation:&lt;/strong&gt; Once Squash and Pumpkin have been cooked tender, put in blender and process with Grated Ginger.&amp;nbsp; Place in large stock-pot with Chicken Broth, Peanut Butter, Coconut Milk.&amp;nbsp; Simmer at low temperature.&lt;br /&gt;&lt;br /&gt;Using a 12&quot; square of cheese cloth, create a pouch to contain the Lemon Grass and Anistars.&amp;nbsp; Add to soup and continue simmering.&lt;br /&gt;&lt;br /&gt;Add desired spices - Cinnamon, Garam Masala, Nutmeg, Allspice, Curry, etc.&lt;br /&gt;&lt;br /&gt;Simmer for an additional half hour, discard the cheese cloth spice pouch and serve.&lt;/p&gt;
&lt;p&gt;&lt;em&gt;*Note - This recipe is very forgiving.&amp;nbsp; You can increase or decrease amounts of spices to suit your taste.&lt;/em&gt;&lt;/p&gt;

&lt;p&gt;After state budgetary woes threatened access at some of California's State Parks earlier this year, announcement of new hours for Sutter's Fort&amp;nbsp;has been made.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;The fort is now closed on Mondays,&lt;/strong&gt; but all other days of the week will find it open as usual; other than on certain holidays.&amp;nbsp; This is great news for Californians, and especially school children eager to learn about our rich California Gold Rush history.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;In 1839, John Sutter, a Swiss immigrant acquired a land grant in the Sacramento Valley from the Mexican government.&lt;/strong&gt; The land was used to create a growing agricultural enterprise, which Sutter named, New Helvetia (New Switzerland.)&amp;nbsp;&amp;nbsp; New Helvetia was Sacramento's earliest settlement and the first non-Indian settlement in California's Central Valley.&lt;br /&gt;&lt;br /&gt;Sutter sent assistance and aid to the Donner Party In 1847.&amp;nbsp; The group of immigrants had&amp;nbsp;become trapped in a winter storm in the Sierra Nevada Mountains.&amp;nbsp; Ultimately, Sutter became known for his hospitality and for providing temporary refuge to travelers. New Helvetia became the destination for many early immigrants to California.&lt;br /&gt;&lt;br /&gt;Less than a decade after the Fort was established, gold seekers overran Sutter's properties and the Fort is all that remains of New Helvetia. &lt;p&gt;Awhile back, I watched a travel documentary, which spoke about the &lt;strong&gt;California Gold Rush&lt;/strong&gt;, and the &lt;strong&gt;Nevada Comstock Load&lt;/strong&gt;.&amp;nbsp; According to what was presented, in &lt;strong&gt;TODAY'S&lt;/strong&gt; dollars, the gold taken from the California Mother Lode would be worth approximately $13 billion, and the silver extracted from the Nevada Comstock would fetch $6 billion.&amp;nbsp; &lt;br /&gt;&lt;br /&gt;Consider for a moment, the&lt;strong&gt; government bailout of AIG has been $180 billion&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;That's multiple times more than the entire&amp;nbsp;&lt;strong&gt;COMBINED&lt;/strong&gt; current value of the gold and silver taken from the California Gold Rush, and the Nevada Silver Comstock.&lt;br /&gt;&lt;br /&gt;It certainly puts into perspective the value of things, and adds new dimension to the term, &quot;Too big to fail.&quot;&amp;nbsp; &lt;strong&gt;Pretty amazing isn't it!&lt;/strong&gt;&lt;/p&gt;&lt;div class='agent_signature'&gt;&lt;p&gt;&lt;img src=&quot;http://www.webstarmagic.com/realtor/images/myrl_jeffcoat_signature2.gif&quot; alt=&quot;&quot; width=&quot;179&quot; height=&quot;63&quot; /&gt;&lt;/p&gt;&lt;/div&gt;</description>
