Cowboy Caviar Recipe - An Easy and Fresh Bean and Veggie Dish! - 12/21/11 12:50 PM
 My Dad created this version of Cowboy Caviar which is traditionally a mix of black-eyed peas, corn, veggies tossed in a marinade to create a super fresh and really tasty dish that's perfect as a side or for scooping up with tortilla chips.
I tried it out last weekend and since then I've made two batches - it's THAT good!!!
It's very easy to adjust the recipe to your preferences and I've added in some chopped jalapenos for a little heat.

This soup is warm, comforting but not too heavy and it's perfect for this time of year!  It's similar to broccoli cheddar soup but with lots more veggies.
Inspired by the site Lulu the Baker (who has some really cool recipes, worth checking out!) I made some adjustments to the original and this is a very easy recipe to tweak and modify to your preferences.

South Park Pet Adoption and Upcoming Charlotte NC Animal Care and Control Events December 2011 - 12/02/11 05:33 PM
The monthly Animal Care and Control Pet Adoption Event at South Park Mall is tomorrow, December 3rd from 10am-4pm in Circle Court.
