Here is a recipe from my mother-in-law's cookbook. It's great for events, or family staying with you, holidays, etc. It also serves nicely with a variety fruit bowl! You can make this the night before so in the morning all you need to do is preheat the oven and bake!
BREAKFAST CASSEROLE
1 (2lb) bag Potatoes O'Brien
1/2lb Shaved Ham
1/2lb Velvetta Cheese
1 Stick of Butter (1/2 cup)
10-12 Eggs (Depending on how egg-y you like things. I use 10, my mother in law uses 12)
3/4 Cup of Milk
Spray the bottom of a 9x13 pan with non-stick spray. Pour in frozen potatoes. Put the shaved ham on top of the potatoes. Melt the cheese and butter together. In a seperate bowl, mix the eggs and milk, and then add the cheese mixture. (A hand mixer, like for shakes, is a great tool for this!) Pour the mixture over the ham and potatoes. If you are preparing this the night before, cover it tightly and refrigerate. When you are ready to bake, preheat your oven to 350 degrees, and bake for 1 hour.
I hope you enjoy it as much as we do. As I said before, the mixed fruit bowl is a nice addition with a tall glass of orange juice.
Last year my friend and I found this wonderful recipe on http://www.crockpot.com/ and thought I would share it! I am also going to include my variations. This is a wonderuly hearty soup, perfect for a cold day, or any day! We made it for our camping trip that way there was always warm food and we didn't have to worry about cooking. And the kids loved it!
Instead of 1lb. of ground beef, I do a half pound of ground beef and a half pound of sausage all fried together.
Instead of 2 cans of stewed tomatoes (Love the taste of tomatoes, can't stand the texture) I opt for 1 can of tomato sauce. (Flavor without the texture!)
I also add a carrot or two, depending on how much I am trying to make. Slices or chunks work, whichever you prefer!
I hope you enjoy it as much as we do. We rarely ever have left-overs when we make it, and on the rare occasion that we have them, it's really good the next day too!
***Make sure to wait on adding the macaroni. It'll get too tender if you add it too soon!

The American Flag is so beautiful, and it stands for so many things important to who we are and our country.
I had to stop at Wal-Mart on my home this afternoon to buy aspirin and an onion. I parked and as I was walking up to the building, I was looking at the terrible mis-matched paint they used to paint the top of the building. My attention was quickly diverted to our American Flag.
There it hung. Half way down the pole, wrinkled up against the building, and upside down. I thought to myself it was a terrible shame and that it should be corrected A.S.A.P. I do understand, that our weather has been extremely diverse over the last few weeks between wind, snow, rain, and whatever else Mother Nature thinks she can throw our way. Sometimes things such as the flag becoming tangled within itself are going to happen. I walked into the building and up the one of the two greeters near where they keep the carts. I had to interrupt their conversation finally to let them know about the flag. I explained to her that I had noticed the condition of our flag and that perhaps someone should correct it. I was very kind about it, why wouldn't I be? She looked at me vaguely like maybe she didn't understand what I was talking about. I repeated myself, this time indicating that it was our AMERICAN FLAG hanging in disgrace. She just looked at me and said okay, almost as if she couldn't believe I had even bothered to say anything at all.
I made my purchases and headed for home. I watched along my drive for other flags to see how they were being displayed. Every last one of them was displayed correctly and flying proudly, from private residences to the airport and factory's.
None of my friends or family currently serve our country. But I proudly support those who do. I just feel that if so many people are fighting for our flag and what it stands for, the very least we can do it to make sure we represent our flag properly, and understand why we should do so.
Maybe I am jumping to conclusions or speaking too quickly, and perhaps I wouldn't have even mentioned it again at all, if the greeter wouldn't have looked and talked to me the way she did when I addressed it. Maybe I am just sensitive today, but I will drive by there again tomorrow to see if it has been corrected.
She was the cutest darn puppy I had laid my eyes on in a long time. I didn't know very much about the new 'hybrid' breed, but she's cute so it didn't matter. In December of 2006, we had to put my best friend, Charles, to sleep. He was the best Boxer I had ever known and I was devastated. I thought a new puppy would help relieve some of the pain.
I love Lucy Mae. We got her a few days after the passing of Charles. She was the most relaxed of the bunch, and she slept A LOT! But that didn't last long. I was not prepared for the energy level of this puppy after having gotten comfortable with my old lazy Boxer.

She's great with my daughter, but she loves to chew my daughters toys. Usually she's good about staying within her fenced yard, but she loves to dig holes in it. She's got the bark of Beagle, and she isn't afraid to use it, EVER!

My husband might choke me today...... I think he would rather waste his Saturday laying around on the couch and watching cheesy old movies. Instead, we are working on painting our dining room!! This has been an on-going project for nearly a month now. (We had ugly wall paper to remove first)
He might not have minded so bad, except I want stripes!! And not in different colors, just between flat and semi-gloss. I have no idea what he's complaining about, the folks on HGTV knock these rooms with stripes out in 30 minutes or less!
If anyone has painted stripes before, do you have any tips to share about getting the tape straight? Or do you have any good disaster or happy ending stories to share? It's even better if these stories were HGTV inspired!

In an attempt to offset the difference from capping property taxes through the state of Indiana, they agreed to raise our sales tax to 7% beginning on April 1, 2008. I think it's unfair that they are beginning the new sales tax effective almost immediately, however, homeowners have to wait nearly two years to feel the relief on their property taxes. St. Joseph and Lake Counties in Indiana got the short end of the stick. These two counties, AND ONLY these two counties, are exempt from the property tax cap. Yet they are also required to pay increased sales tax.... hmmm.......
So hurry out and buy those things now, to avoid to paying more in the end!
It's official! Spring for real estate in Elkhart, Indiana has arrived. (Just never mind the snow / rain / sleet mix we experienced this afternoon.)
I took a listing from a FSBO (For Sale By Owner) last October. It has had a few showings here and there with little or no interest from the prospective buyers. We dropped the price a couple times, and now because of the declining market we actually have it listed for less than what the sellers paid to purchase it.
