Help! I need a recipe for a Brunch Dessert with limited ingredients!

Next Sunday my Sunday School Class is having a brunch at one of the ladies' houses. Because I didn't respond to the email early enough, I was asked to bring a dessert. That was easy enough. So I said yes, of course!

Then I get an email that says Ann, not her real name, is allergic to Chocolate.

Well that takes care of my favorite.

OK, I have a great cheesecake recipe. Then another email came that said Sue, not her name again, is allergic to cheese, including cream cheese and yogurt.

This isn't funny anymore. I don't know how to bake pies. And I don't have time to make 2 or 3 different things. I do work full time.

So now I've come to you, my food friends, for help. 

Please either post something or email me. It's Sunday the 4th!

I have a little recipe that I whip up in nothing flat.  I call it "Stir Fried Apples."

Peel, core, and slice apples.  In a skillet melt some butter over medium-low heat.  Add some brown sugar, with a little vanilla.  When it get's a little syrupy, turn up the heat a bit, and throw in the apple slices, some chopped walnuts, and raisins or craisins.  Stir fry.

They are tasty for Breakfast, Brunch, Lunch, and Dinner.  They also make a great dessert when served warm, with scoops of Vanilla ice cream on them.

Easy one Connie!

Fruit torte with creme fraiche as the baes on top of a sweet crust and raspberries, strawberries, kiwi and blueberries. Easy!

Missy -Red Velvet cake. I've never been much of a baker myself either. That cake does NOT sound easy!

Bo - The sweet crust, is it like a cookie crust or a pie crust. I'll need to look at a creme fraiche recipe. Sounds yummy and those are my favorite fruits!

Yum...Stir Fried Apples! I'm all over this one...with some good ice cream! BTW, you should taste my rum cake.....to die for and then some!

Promise me you are going to Charlotte and I'll bake one and bring it! We can all meet in our hotel lobby (it WILL have breakfast or coffee available) and you can taste away!

LOL!  You are my kind of gal!  I'm getting hungry just thinking about these great desserts!  I think those fried apples sound SO good!  I had a killer apple and cranberry cobbler tonight with a crunchy granola crust.  WOW..it was delicious.  Couldn't tell you how to make it, rotfl...try those fried apples.  Now I'm off to dig through cabinets for something sweet to eat!

Connie - I'm late answering your SOS call....sorry!  If you have another emergency like this, you might want to try Ooey Gooey bars.  They're super easy and always a big hit at our office gatherings.

INGREDIENTS 

1  box Duncan Hines Moist Deluxe cake mix (Golden Butter Recipe)
1  stick butter, melted
1  8 ounce package cream cheese - softened
1  pound box powdered sugar, PLUS more for sprinkling
1  teaspoon butter flavoring
3  eggs

 

DIRECTIONS 

Preheat oven to 350º
1.  Mix together cake mix, melted butter and 1 egg.
2.  Pat cake mixture evenly into the bottom of a 9X13 inch pan (dough is stiff)
3.  Mix cream cheese, eggs, butter flavor and powdered sugar with electric mixer until smooth and creamy
4.  Pour cream cheese mixture over cake mixture
5.  Bake for 35-40 minutes.  Cool completely, cut into bars and sprinkle with more powered sugar

I didn't have any great idea because I often bake with cream cheese and/or chocolate, but I've seen some great ideas.

Those apples are a good way to go.  I make them sometimes on weekends because my husband loves them.  Hadn't thought of the raisins or craisins.  Good idea.  I also add a good bit more butter and make andditional apple syrup to go over pancakes.  Yum!
