Fried Okra Salad

Ingredients:

  • 6 Slices of bacon
  • 2 packages (10oz. each) frozen sliced okra (unbreaded), thawed
  • Cornmeal for coating
  • 1 large tomato
  • 1 small to medium onion
  • Red Wine Vinegar salad dressing

Directions:

Fry bacon until crisp, set aside.  Add enough oil to the bacon drippings to fry okra.  Lightly coat thawed okra in cornmeal.  Fry okra in oil until cooked through, set aside to cool to room temperature.  Just before serving, crumble bacon into okra.  Chop tomato and onion and stir into okra.  Top with dressing to taste.

Bring to room temperature before serving.

Yum. My son will eat any vegetable if it has bacon in it!

Allegra-Bacon makes just about anything good, doesn't it?

Lourdes-This is a really good way to try okra out on.

Leilani-You can use the frozen in a bag, if the stores don't have the fresh.
