Texans, like many folks in other states, enjoy the fun of an old-fashioned crawfish boil! I grew up in upstate New York so I was use to clam and lobster boils or bakes!
My daughter and family host an annual feast for family and friends. Families with all ages get their jeans on and come ready for fun.
I am always amazed at the wonder and adventure the children exhibit while helping out! First they dump a sack of live crawfish in big pots of water and rinse several times while adding salt. The kids all giggle, screech, oohhh and ahhhah as they take turns stirring and poking them around!
There is a big pot of (spicy) boiling water they throw the cleaned crawfish into with ear of ears of corn (all shucked), mushrooms, carrots and little red potatoes.
The pot is stirred by the adults but the kids dance around waiting to get their pan where they can throw the finished product in and have at it! Even the timid little girls are busy figuring out how to crack them open and get the meat (awful lot of work for a small return). One precious little girl checked her pile of crawfish and said "Mommy, look one got sick!!"
While all the cooking is going on, kids are swinging lazily in hammocks, playing tag, jumping on a trampoline while many adults are playing horseshoes or just visiting and having fun.
