
I love pasta, all kinds, interesting since I wasn't raised on pasta and didn't live in a pasta popular area. We thought the word spaghetti was the all encompassing word for pasta. I didn't really become a pasta/Italian fan until I moved to the Northeast, and had some authentic Italian dishes, and then after going to Italy several times, I really started experimenting with the dishes over there trying to recreate as best I could. This recipe, is delicious, but is a little time consuming and difficult your first time, but well worth it.
Ingredients:
- 4-Baked potatoes
- 1-Tbs salt
- 2-Cups flour
- 1-Egg beaten
Recipe:
Mix potato, flour, salt and then eggs. Squeeze together. If too sticky add flour. Make dough. Sprinkle flour on top of clean surface. Kneed sough, pick up pieces , oval shape (sticky). Cleaning area of pieces. Flour the surface, cut 1/4 off. Roll into bread stick thickness of hot dog. cut into 1" pieces. Use fork roll gnocchi up fork to form indentation. Add to boiling water. Rise in about 30 to 40 seconds.
When ready to cook, use a large saucepan a little over 1/2 full until boiling, pour gnocchi in until it floats to top, about a minute. Take out and drain. Don't let it stay in too long or it will become mushy.
