Texas Jack

Ingredients:

  • 4 slices bacon
  • 1 med. onion, chopped
  • 1 green pepper, sliced
  • 1 8oz. can tomato sauce
  • 1/2 lb. sharp cheese, grated
  • 2 (1lb.) cans red kidney beans
  • 2 T. chili powder
  • 1/ t. salt
  • 1/8 t. black pepper
  • 4 to 6 wieners

Brown bacon until crisp, drain on paper towel.  Use 2 tablespoons bacon fat and cook onion and pepper until soft, but not brown.  Add remaining ingredients except wieners.  Stir over low heat until cheese is melted, slice wieners and stir into mixture.  Good served on hot toast, or rice.

Hi Cindy,

Thanks for the recipe. I've never had 'Texas Jack' but it sounds great! And easy to do. I'm guessing it's probably better over rice than toast ???

You would not believe how long I have been looking for this recipe!  My Mom and Dad made this one rainy afternoon when I was a small child and I remembered it being soooo good.  We had it over toast with grated longhorn sharp cheddar cheese on top.  My Mom died 25 years ago and my Dad does not recall the recipe or even the event so could not help me recreating it.  It is funny the memories that you can hang on to as a child.  Thanks so much for posting this simple fare and reliving a loving, safe, secure afternoon with my parents.  Respectfully Leslie
