A great way to serve tropical summer fruits!
Needed:
  • Wooden Skewers
  • Spray Bottle
  • Assorted Tropical Fruits
  • Agave Nectar
  • Toasted Coconut
  • Lime Juice
  • Waxed Paper
Assembly:
  • Soak wooden skewers in water for about an hour.
  • Line a pan with waxed paper to place the skewers on.
  • In a bowl mix 1/4 cup Agave nectar (available at healthfood stores) 4 Tablespoons warm water, 1 tablespoon fresh lime juice.  Add this mixture to a spray bottle and set aside.
  • Dice Pineapple, Mango, Bananas, Strawberries, and other tropical fruits of your choice.
  • Spread toasted coconut on waxed paper, set aside.
  • On the skewers, arrange the diced tropical fruits
  • Lightly mist with the nectar mixture, just enough for them to hold the coconut
  • Roll in coconut and set on the waxed paper in the pan.  When coconut is set - serve!  Delicious!
Great served with Lemonade, Iced Mango Tea or some other wonderful tropical flavored drink!  If you're in an outdoor setting, don't forget the little screened domes to put over the fruit to keep buggies away!
