With the market picking up, I don't have much time to make dinner. Before you know it, I'm resorting to my "quick and easy" recipes. I thought I'd share one with you. This one is famous at our office potluck lunches! Don't be afraid to let me know what you think! Enjoy!
Easy Creamy Chicken Enchiladas
What you need:
- 1 can cream of chicken soup
- 8 oz. sour cream (I usually buy a 1 lb. container, for a little extra!)
- 1 cup salsa
- 2 tsp. chili powder
- 2 cups chopped, cooked chicken
- 1 cup shredded cheddar
- 10 fajita size tortillas, warmed
- 1 green onion, sliced
Then I mix the soup, sour cream, salsa and chili powder in a bowl. After mixed, take 1 cup of the soup/sour cream mixture and place in another bowl with 2 cups of the chicken and the cheese. Spread about 1/4 cup of the chicken mixture down the center of each tortilla. Fold the tortillas and place in a baking pan, seam side down. Pour remaining soup/sour cream mixture over the top, and throw it in the oven! Cover with foil and bake for 40 minutes at 350 degrees. I usually top with black olives, tomatoes, and green onions. Yum! Enjoy!
