Summer Recipes to Live For

My wife Kathy is a remarkable woman and one of her many talent is cooking.  We just had one of  my favorite summer treats made with fresh heirloom tomatoes and fresh basil.  Too bad I didn't make the cheese.

Try It,  You Will Like It!

Basil Tomato Tart

 

 1 unbaked pie crust

1 1/2 c. shredded mozzarella cheese OR

       1 cup shredded mozzarella cheese and 1/2 c. crumbled feta cheese

4 or 5 tomatoes

1 c. loosely packed basil leaves

4 cloves crushed garlic

1/2 c. mayonnaise

1/4 c. Parmesan cheese

1/8 tsp. Pepper

 

Prebake pie crust in 350 degree oven about 10 minutes or until it is barely brown.  Immediately sprinkle on 1 c. mozzarella cheese.  Cool.  Cut tomatoes in slices, arrange atop cheese.  Dice basil, mix with garlic. Spread over the tomatoes.  Mix the balance of cheeses, mayo and pepper – spoon over all.  Bake 375 degrees, 35 to 40 min.
