By establishing what your clients expectation are will allow you to meet them and exceed them, it is true that each of us has a different set, but if we don't ask we will not know what they are.
The underpromise and over deliver is very effective - but I am such an optimist that I keep forgetting not to promise them the world. :)

We have to understanding our customers at the beginningof the business relationship and determine what the customers expectations are at that time,if they are reasonable and if we will invest our time with them.
Not everyone we meet should turn into a customer.
