My husband was diagnosed as a diabetic about 5 years ago, but until very recently did nothing other than some times taking medication ( inconsistently) did little about it despite the whole family begging him to. I personally ate a diet closer to what I diabetic would want to than he did. So imagine my delight when he made a commitment to get his blood sugar under control and to eat a proper diet.
However I have also been panicing a little....although I know how to cook with all whole grains and with out any sugar, I have never learned to count carbs and to cook low carb. So, I have learned to cook a new way several times over....here we go again.
I will be sharing recipes as I develop them ( I promise only the good ones not the oops's) Hope you love this recipe...
It is one I developed this Saturday....it's likely one of the most complex flavors I have developed in a recipe and I really like it despite the fact that I HATE celery. My husband loves it despite the fact it is low carb and he is really really picky. (Karl insisted on having it for lunch and dinner Saturday and for breakfast this morning)
So here it is:
12 cups of water and chicken boullion to in an amount to go with directions for 9 cups
Or
3 quarts chicken or veggie broth
plus-
1 Cornish game hen ( remove giblets if there are any)
8-10 stalks of celery cut up in very small cubes
1/3 of a large bunch of water cress cut up fine
1/2 of each Green pepper, Yellow pepper, Red pepper Chopped fairly fine.
1 very small to 1 medium zucchini cut into small matchsticks
1 green onion, just the green part chopped
1 handful of yellow or white onion chopped
1/2 of a small ( fist sided) potato, chopped into very small pieces
1 handful of grated carrot
1 dash tabasco
3-4 cloves of garlic pressed.
Sea salt or braggs liquid aminos to taste if needed
To make it...
Put water and boullion or broth into a large stock pot. Add game hen whole and raw to pot. Turn on med heat. Add onion, celery and potato first then add other ingredients except for sea salt or braggs aminios. ( which you will add if needed after it has cooked to taste)
Bring it all to a boil and then turn it down. Add a bit more veggies and water if desided as it cooks. Simmer for at least 3 or more hours. Once it is boiling and you turn it down to simmer cover the pot.
When it is all cooked remove the game hen, remove meat from the bones and put back into the soup. Serve and enjoy!
Notes- I added just tiny bit of a couple of carby veggies. ( potato, onion and carrot) these add flavor and help the diabetic not feel totally deprived of these items, however the quantity of them in the recipe make it still a very low carb dish. ( not likely to have an effect negatively on blood sugar) If you are not worried about carb count, or do not have to watch them as closely as the diabetic then you may want a bit more of these ingredients depending on the taste you prefer.
