This is my second Italy flavored post in the past hour. I had to do it. I was looking through some of my Italy photos today. My wife and I, about three or four years ago, spent two weeks in Bologna. If you don't know it, Bologna is the food capital of Italy. It is in the bread basket of Italy, the Emilia Romagna region, and it is noted for the best food in all of the country.

Their pastas are handmade in all the delis and the restaurants. You can see people making them, often little old ladies who have done that for a lifetime and take as much pride in it as the finest artists. The shops had great tortellinis, you name the pasta they have it, and spaghetti Bolognese has the root word Bologna in the name. While we were there, I got an authentic recipe for spaghetti bolognese and I can honestly say that I captured the secret ingredient and pretty much duplicated the taste. That made me happy and my friends all want the recipe. I give it to those whom I like, and who treat my highly talented assistant Nutsy well. If they are rude to Nutsy, they get tossed out on their ear with no recipe. Here are a couple photos taken at one of the top delis along the main street in Bologna, the food capital of Italy.

Hmmm... I am not rude to your talented assistant Nutsy, I just want him to see the boundaries that he has a habit of leaping over :) My mother, on the other hand, used to shoot squirrels with a BB gun -- I would never do such a thing!

And I love Italian food! I spent time in Florence and never got to Bologna, and the food Italians cook is soooo different from what is usually called Italian food here.

Although I have never been to Italy, I do love Italian food and pasta is a particular favorite of mine.  My brother just returned from his second trip there.  I will make it someday!
