Here is an easy way to make corn beef hash at home:

•·         2 tablespoons butter

•·         1 tablespoon olive oil

•·         2 cups cooked corned beef, finely chopped (about ¼ pound not sliced from your stores deli)

•·         3 cups cooked, chopped potatoes

•·         ½ purple onion diced

•·         ¼ teaspoon red pepper flakes

•·         salt, pepper to taste

Melt butter and olive oil in a large skillet over medium-low heat. Add corned beef, potatoes, and minced onion, salt, pepper and pepper flakes.  Spread evenly in the skillet. Brown on one side; turn with a spatula and brown the other side. Continue turning until most of the meat and potatoes are well-browned.

Hi Richard... nobody seems to cook like this at home anymore.  It's good tasting and less expensive than dining out.  I wonder why?  Maybe it's a covenience issue?
