Gosh that bowl of plums looks good! I've never really like them canned, and like them dried as prunes best. Do you have a dehydrator? How about pitting them and freezing? Of course, if I had that bowl, I'd probably eat a lot of them and not have many to go to all the trouble of canning anyway :)

Hello Lee and Carol, I'm with you, eating them fresh when the flesh is yellow (not greenish) is my favorite.  Ran out of freezer space this year (blueberries & Corn!), and need to get a new dehydrator.  I did can a batch or two. Thanks!  John
