WHAT TO COOK??

One of my favorite meals to prepare is Thanksgiving Dinner, creating memorable meals for the last several years.thanksgiving dinner

This year it will be a challenge, with several guests banning certain foods from their diet----one on the Atkins, one on Weight  Watchers, another no sugar, who eats only vege's and kids who think chicken nuggets and macaroni and cheese or pizza are the greatest meals ever!! 

So, I'm starting to plan already, checking out cookbooks  and reading labels.

ANY IDEAS?

Oh I have ideas....my husband is always on some diet and has spent time as a vegetarian.

I make a butternut squash "mashed potatos". I use lots of spice (pumpkin pie is a great all-in-one) and heavy cream....for the Atkins diet. Then I use Splenda or some other arificial sweetener....yummy.

For the Vegetarian? I make an Artichoke Gratin

I also make a heavy mushroom dish and top with a stuffing. Portobella Mushrooms topped with a mix of interesting mushrooms and pan fried stuffing on top for crunch. A vegetable broth based gravy is perfect over this dish.
