Here's this weeks Recipe coming to y'all from deep in the heart of Texas Kitchens.
This is another passed down from my mom. It's great to make in a crock pot too. As a matter of fact, it's what's for dinner tomorrow!!
Ingredients:
- 1 lb. dry pinto beans
- 2-3 Dried Red Chilies Washed, Stemmed & Seeded
- 4 Slices chopped bacon (can use Turkey Bacon)
- 2 t. salt
- 1 large onion chopped
- 1/4 c. firmly packed Brown Sugar
Recipe:
Put beans in pot and cover with water overnight to let swell. When ready to cook, add chilies, bacon and salt. Add water to cover, boil, reduce heat and simmer 1-1/2 hours. Add remaining ingredients and add more water if needed. Cover again simmer 30 minutes until tender, take chilies out. Serve.
Delicious with rice and cornbread!
