I Love Summer- My grill is always ready and most nights I am cooking something tasty for the family. I wanted to talk BBQ for a moment and maybe get a good hearty discussion going!
Let me tell ya a little about local tradition in my neck of the woods :
Eastern North Carolina takes tremendous pride in their unique style of BBQ. Ask anyone who has visited east of I-95 and they may tell you our BBQ doesnt really "look" like BBQ at all!
Traditional red sauces can be found on other parts of North Carolina BUT Eastern North Carolina has a special way of saucing up their smoked pork...vinegar and pepper flakes mostly. The meat sits inside the grill, seldom opened with the exception to baste with the vinegar mix to keep the meat moist.
A local tradition is to have a good old fashioned Pig Pickin' . This type of backyard fun is similar to the backyard BBQ - but at a pig pickin the roast is an all day event with lots of fun to go with it! Pig pickins go with football, live concerts, family reunions and a pre-wedding party. Typical "fixins" are sheet cakes, boiled potatoes, green beans also slow cooked- with bacon or fatback.Hush puppies on the side. Slaw is always a great compliment inside the bun with the pulled pork. Smithfields has the best sandwich in my opinion! Sweet tea is always available and when I say sweet- I mean real sweet. We just like it that way!
Having lived in Florida where beef and pork are basted in red sauce spiced with varying degrees of heat, and Pennsylvania where sauce is used more sparingly and a dry rub is welcomed....
I want to ask...How do You BBQ ??? !
