Since the holidays are right around the corner (yippee!), I know many of us will be doing a great deal of baking.  Here are some quick tricks in the kitchen that can save preciuos time.

Prep on your own schedule.  Most types of cookie dough will keep in the freezer for four to six weeks if you double-wrap it tightly in plastic wrap.  Thaw before baking.

Grease your measuring cups before measuring syrupy ingredients like molasses-- a little nonstick cooking spray helps thick liquids pour easily.

Line your cookie sheet with parchment paper or a baking mat.  Cookies won't stick, so cleanup will be speedy.

Cut up butter so it will reach room temperature faster.  A whole stick may require 45 minutes, small cubes will just take 15 minutes or so.

Take your oven's temperature.  Oven heating is surprisingly variable.  Check yours with an oven thermometer to make sure it reaches the temperature needed for your cookies and cakes.

ENJOY!!

Great reminders Kristin. I am making a huge batch of gingerbread dough tomorrow. Some I'll use right away the rest I'll freeze. It you do a little at a time it's not so overwhelming.

www.ToulaRosebrock.comHi Kristin:

I'm planning on doing some cookie baking this year.  Hopefully I'll have the time!

I knew about the parchment paper trick & the butter but didn't know about the spraying Pam in the measuring cup.  That makes sense.

No freezing for me...fresh-fresh-fresh!!!

Kristin.. Once again you have come through with some great information. I never knew about greasing measuring cups.. but I do now.  All I have to do is find the time to bake.

Kristin!  We are ready to leave for a dinner date and now I will probably have to order dessert because of your decadently, lustrous blog!

Valerie, I know what you mean.  I had a couple weeks there where I tried to bake something each Sunday.  Well, it has been a few wks since then and no more baking since !  oops!  Also, I bought a bread maker and it is still in the box!

Great tips, Kristin, and for the baking impaired there is always a trip to the local bakery to have all the cookies on hand that will be needed! :-)

I have a love-hate relationship with the Holiday season.  Great foods such as these seem to be within reach each and every day and, of course, come January I always discover that I've gained several unwanted pounds.  Drat!  But, who doesn't love cookies?

Tom, I think we can ALL relate on that one...but, food and drink are so much a part of the festivities!  Enjoy!
