LETS GET PATRIOTIC.....

Do you have plans for the 4th of July yet????

This is the day that boys of all ages long for.... a day to blow stuff up!  Two boys live at my house. 

One is 15 and the other is 40.  On Independence Day... it is hard to tell them apart. 

I live in Vancouver Washington, a town that boasts the biggest fireworks display west of the Mississippi.

If you have lived here as long as I have, you have no doubt been to the celebration at

the Fort Vancouver Historic Reserve. It is impressive!

If you are new to the Portland Metro Area, you owe it to yourself to attend. 

I will be at a block party in my neighborhood with my family and neighbors. 

I know what you are thinking???  Kelli, what will you bring to the potluck??? 

Here is the recipe for my favorite dessert to wow the revelers.  It's not fancy... just FANTASTIC!

MARGARITA PIE-NOT FOR THE KIDS!

  • 1-1/2 cups crushed pretzels
  • 1-1/3 cups sugar
  • 1/2 cup butter, melted
  • Zest of 1 lime
  • 1/2 cup fresh lime juice (key limes are best)
  • one 14oz can sweetened condensed milk
  • 2 tbsp tequila.... the best you can afford!  I usually don't stop at 2 tbs. I give it an extra splash.
  • 2 tbs. triple sec
  • 1-1/2 cups heavy cream whipped
  • mini pretzels for garnish
  • lime slices for garnish

PREPARATION:

Use a food processor to blitz the pretzels into crumbs.  Combine with sugar and butter in a medium bowl.  PPress the mixture in to a greased pie dish. (9 inch)  Think graham cracker crumb crust with a salty twist.

Chill for 1 hour.

In a large bowl, combine lime zest, lime juice, condensed milk, tequila and triple sec.  Fold in 1 cup of the whipped heavy cream.  Pour into the prepared crust and freeze overnight.... or 4 hours if you can't wait.

Decorate with the remaining whipped cream, pretzels and lime. 

Yield 8 servings.

Serve with the remaining Tequila, lime wedges and a designated driver

For the health-conscious folks coming to your Q, try grilled yellowtail tuna on salad:

take a couple of yellowfin tuna steaks

mix lime juice, dry white wine, ginger powder and a smidgeon of oil to make about a cup of solution

don't skimp on the ginger powder

marinate fish for an hour or so, flipping it over halfway through

grill VERY LIGHTLY both sides -- won't take 10 minutes -- yellowfin is very good cooked rare; just don't overcook it

cut into bite sized pieces and toss with a good green salad

OMG - this sounds like it's going to be 'sinfully' delicious!  Can I come to the block party too?!  It will only take me about 6 hours to fly out there!!
