What's on everyone's mind - Buffalo Chicken Dip for the Big Game!

The big day has finally arrived, the BCS Championship game in Pasadena California.  The Alabama Crimson Tide against the Texas Longhorns.  Here in Hoover, Alabama football is EVERYTHING.  The Hoover High Bucs won the 6A STATE CHAMPIONSHIP this year and now one of the state's largest universities is going for the National Championship.

Two big news items for today are the game AND the snow we were SUPPOSED to have.  So the big concern for today has been whether or not the cable/satellite will go down and people will not be able to see the big game.  Parties have been planned for weeks and people make plans to tackle the elements as they venture out to watch the big game with family and friends.

Of course my husband and I plan to attend a party this evening and each guest is supposed to bring an appetizer or sweet.  I'm not a big sweet cook so I'm planning on bringing one of my favorite dips - Buffalo Chicken Dip.  It is my FAVORITE and I can't wait to dig in.

Here is how I make it:

You will need:

3-4 chicken breasts

1 package of cream cheese

½ bottle buffalo wing sauce

½ jar blue cheese dressing (the fresh, chunky kind from the produce department)

8 oz or mild cheddar or longhorn cheese grated

Fritos Scoops

 

Boil the chicken breasts until cooked (about 15 minutes).  Shred or cut thr chicken meat into small pieces and cover with buffalo wing sauce.  Stir until blended and place in refrigerator overnight (or for an extended period).Buffalo Chicken Dip

Barely soften the cream cheese in the microwave and add to the chicken meat.  Blend together

Spread the chicken/cheese mixture into the bottom of a 9 X 13 pan

Spread blue cheese dressing over the chicken

Sprinkle cheddar cheese over the top

Yes, LOTS OF CHEESE

Buffalo Chicken DipBake on 350 for 30 minutes

Serve the dip hot with the Fritos scoops

I'm on my way to the kitchen now to prepare it.  Even if the weather turns bad and we CAN'T go to the party, we'll be eating that dip tonight!

That sounds extremely yummy!  I think I will try this recipe this weekend.......guess I'll give up on losing this weight.

I can honestly say that this dip is delish! How can I say this so emphatically? Well, Toni brought it to my house on game day! A Yummy time was had by all.
