If you are like me, then you love to cook on the grill and you love BBQ. Although I am from the northeast, I have a foodservice background and have spent a lot of time in and out of some of those hot spots in Texas, the Carolinas, Tennesee, etc   So, for my friends in the northeast....BBQ does NOT mean hamburgers and hot dogs. I am talking about pork and brisket.

 

    

 

Now that you are hungry, you are also probably looking outside thinking about summer. After all, there is no way to keep that smoker at the optimal temperature during the winter with the cold wind blowing all day.

Well FORGET THE SMOKER !  What i am going to tell you will not only help you to make your favorite BBQ in the winter but may also result in you saying goodbye to the smoker even in the summer.

You are going to cook this inside AND you are going to do it in a fraction of the time. How Eric? How can this be?

PRESSURE COOKER !

 

 

 

 

 

 

 

 

 

 

 

This is so simple that you will all thank me later....

Prepare the meat with your favorite rub. Place it into the pressure cooker with a half inch of liquid at the bottom. Depending upon what you are cooking, that will determine what liquid will work best. For this application, you may use wine, vinegar, or whatever you prefer...PLUS two drops of liquid smoke. NO BBQ SAUCE YET. throw in some garlic, chopped onions, a few hot peppers or whatever else you like.

Close and lock the lid. Turn the flame on high until you hear the pressure release from the valve on the lid. Then reduce the flame to low and cook for 30 to 45 minutes maximum.  Not 6-8 hours. The meat will be falling apart.

Then, release the pressure from the pot (see instructions) and open lid. At this point, you can remove the meat and finish on the gas grill or the broiler for just a few minutes with your home-made BBQ sauce IF you use any. Personally, I do not need any with the rub that I use. This can be done with ribs too but only for about 20 minutes. With ribs you definitely want to finish on the grill with some type of sauce. I often will use the sauce that is now at the bottom of the pot, reduce it and then add some of my favorite things to it.

Suggestion for the rub

sea salt, fresh ground black pepper, cayenne pepper or fresh ground red pepper, paprika, thyme, garlic powder, onion powder, brown sugar

I have to say I don't own a pressure cooker.  I think the last time I saw one used was by my grandmother 40 years ago.  Intriguing way to cook!  With the weather like it is, it really is too cold to grill.  I like the idea.

There are alot of good sites with recipes for  presure cooking even  for vegans, I have done Navy bean soup when in a hurry.
