Spanish Rice - It Doesn't Get Any Easier Than This!

I used to be able to find great Spanish Rice in package made by Knorr. I don't know if they quit making it or my grocery store just stopped carrying it.

I came up with this Spanish Rice recipe out of desperation. It's so simple and only takes a few minutes and even fewerMexican Cooking ingredients. I am not real big on measurements when I make this, so use your own judgement and taste.

Mexican Cooking Spanish Rice Doesn't Get Any Easier Than This

  • Cooking Oil 1 cups white rice
  • 1/2 cup bottled salsa - your favorite brand
  • 1 1/2 cup water
  • 1 tsp. salt
  • 1 tsp. garlic salt

Barely cover the bottom of a large frying pan with cooking oil. Heat oil. Add rice, salt and garlic salt and brown slightly. Add water and salsa. Bring to boil. Cover frying pan with lid. Turn heat to low temperature and simmer for approximately 15 - 20 minutes. Do not stir until completely cooked.

Everyone's taste is different. So, try it this way and then adjust, if needed.

Great idea - I love to make Spanish rice and have used tomato juice, but I will definitely give salsa a try next time.

Hi Margaret - Using Salsa instead of tomato juice gives it more of an authentic taste, I think.  Let me know what you think after you give it a try.

Hi Dean - My husband is the salsa maker in this family.  It's out of this world good!  Bottled or canned salsa works, too.

Hi Melinda - I have used brown rice and it works fine.  Just add a little more water and cook a little longer.  By the way, my husband and I spent our honeymoon in Grants Pass.  We were headed to Reno when our car broke down.  It turned out to be the best time ever!

Hi Cindy - I've used the boxed stuff, too.  Some are good, some aren't. What's your favorite?

Hey Pamela - Sounds like you've got a winner here!  Most of the time Spanish rice is made with tomato paste or sauce but I think you've improved it with the salsa.  I bet it not only adds lots of flavor but also saves some time. Good job!

Hi Irene:  My husband is of Spanish decent and his mother was an excellent cook.  So, when it passed his taste test, I knew I had a winner.  Thanx for your comments.
