This recipe came to me via a good friend, Judy Webb, who served it at bunco last month.  Everyone raved about it and we were fortunate enough to get the recipe the next day.  Try it - you won't be disappointed!

Corn Bread Casserole
 
2 large onions, chopped
6 tablespoons butter or margarine
2 eggs
2 tablespoons milk
2 (15oz) cans cream style corn
1 (1-lb) package cornmeal muffin mix (I used 2 (8oz.) pkgs. of Jiffy corn muffin mix)
1/2 pint (1 cup) sour cream
2 cups shredded cheese
 
Preheat oven to 425 degrees. Butter a 13x9 baking dish. In a medium skillet, saute' onions in butter till golden brown. Set aside. In a medium bowl, mix eggs and milk until well blended.

Add corn and muffin mix. Mix well. Spread corn bread batter into prepared baking dish. Spoon sauteed onions over top. Spread sour cream over onions. Sprinkle with cheese.

Bake 35 min. or until puffed and golden. Let stand 10 min before cutting into squares. May be refrigerated or frozen and reheated.

Makes 16 servings.

Susan, Thanks for sharing this recipe.  We are snowed in here in Maryland and I made cornbread yesterday.  I'll try your recipe next.  Addubg onions sounds interesting.
