Greenwood SC Realtor Cooks Up A Perfect Recipe For A Cold Snowy Winter Weekend
I promised you quick and easy but this one takes a bit longer but oh so GOOD! I'm sitting in my living room in Greenwood SC all cozy and warm and we're getting our first snow in several years!!! and I just thought of this recipe, it will perfect for tommorrow. I won't be going out because I don't trust my snow driving skills and neither should an buyer be brav enough to get into the car with me. So here's the plan, New England Clam Chowder and a really good movie what could be better! Here you go you'll be glad you spent the time when you taste it. Oh since it's Valentine weekend I thought I would share one of my daughter's wedding pictures with you. It's her recipe so it fits perectly with the theme.
Ingrediants & Directions
Laura's Clam Chowder (my oldest duaghter Laura pictured with her husband Jeff in after their wedding in hawaii)
8 ounces salt pork or bacon
cut in small strips (we use bacon)
2 medium onions, in small dice
3 stalks celery, in small dice
10 cloves garlic, peeled and minced
2 medium bell peppers, in small dice
1/4 cup flour
1 quart clear chicken stock or clear seafood stock
3 bay leaves
1-1/2 pounds potatoes, half of them cooked and put
through a ricer, milled, or mashed, half uncooked but
cut in small dice
1 cup heavy cream
3 pints clams in their liquor (we use 8, 6-8 ounce cans)
Kosher salt and freshly ground pepper to taste
(we don't add any salt)
Hot sauce
1 bunch green onions, thinly sliced
2 tablespoons butter (optional)
Simmer for as long as you like but a minimum of 30 minutes. I hope you enjoy the chowder and my daughter pictures!
