I came across a package of little smokies in the freezer today and immediately thought of this recipe for Breakfast Kolaches. The bread machine does about 2/3 of the work - the stuffing of the little smokies is a little time-consuming but worth it. And in the morning, when I smell them baking - I'm glad I took the time to make my own kolaches.
In the bread machine container, place the following:
- 3 C bread flour
- 1/2 tablespoon salt
- 1/4 C white sugar
- 2 eggs, beaten
- 1 C milk
When the dough is ready, dump onto to lightly floured surface, punch it down and divide it into 36 balls. You can use an 13 x 11" or a few 8" cake pans. Spray the pans with cooking spray. Place the balls in whatever container you've chosen, cover with a clean dish towel & let rise in a warm spot for about 15-20 minutes.
Now you're ready to stuff each ball with a little smokie, making sure the dough surrounds it. If you are ready to bake - it's 375 for 15-18 minutes. If you want to put them in the fridge & bring them out for breakfast - that's okay too. Just cover the pans with plastic wrap & they'll wait until you're ready!
