BLT Wrap
2 large tomatoes, seeded and coarsely chopped (about 1-3/4 cup)
1/4 cup finely chopped red onion
1/4 cup chopped cilantro
1 tbsp finely chopped jalapeno
1 tbsp lime juice
1/8 tsp salt
8 slices turkey bacon or reduced sodium turkey bacon
1/4 cup light mayonnaise
4 (10 inch) vegetable flour tortillas or flour tortillas
2 cups baby spinach
In a bowl, combine tomatoes, red onion, cilantro and jalapeno. Stir in lime juice and salt and set aside.
Cook bacon according to package directions; drain well on paper towels.
To assembly wraps, spread mayonnaise over tortillas and top with spinach. Spoon the tomato salsa over the spinach and top with bacon. Roll up tortillas, then cut in half.
