Cake Balls. I hadn't heard of these little heavenly bites until last Friday. How I've existed up til now without them, I have no idea. As I'm writing this blog, I'm thinking about the flavors of cake mix I have in the pantry....
CAKE BALL RECIPE (makes about 50 balls)
1 box German Chocolate Cake Mix
1 can Coconut Pecan Frosting
2 packages Chocolate Bark
waxed paper
short skewers or popsicle sticks (if desired)
mini cupcake liners (if desired)
1. Make cake mix as directed on box.
2. Let cake cool for 15-20 minutes in pan.
3. Remove from pan & crumble cake into a large bowl.
4. Add approximately 3/4 of the can of frosting into the warm crumbled cake.
5. Mix well. Add a little more frosting if dough is too dry. You should be able to pinch a piece off and roll a ball. Much like making a meatball.
6. Place balls on waxed paper on baking sheet.
7. Place balls in freezer for at least 2 hours.
8. Melt chocolate bark in microwave or over double boiler until smooth.
9. Dip balls in chocolate & place on a new piece of waxed paper.**
** TIPS
If you are using the sticks, much like a cake lollipop, spear the ball & hold it over the melted chocolate. Using a spoon, pour the chocolate over the ball until coated, letting excess drip off before placing on waxed paper.
If you are using the liners only, dip the balls using two spoons to move the ball back & forth for coating. Or try an egg separator to hold the ball for dipping. Place on waxed paper & when the coating sets, move to the liner.
Now, the flavor combos are endless. Strawberry or Cherry cake mix & Cream Cheese frosting dipped in dark chocolate. Or Dark Chocolate cake mix & Dark Chocolate frosting dipped in white chocolate. Or maybe Yellow cake mix & Peanut Butter frosting dipped in milk chocolate.
