365 Days of the Celebration of Food, Recipe 10, Grilled Steak Sandwich, I created this sandwich when I was working in a Country Club in Atlanta. It is a basic steak sandwich, I would use any left overs steak I had when doing this but really liked it when I had left over flank steak..
Sandwich Ingredients:
Flank Steak
Focaccia Bread
Duxelles (Wikipedia)
Mayo
Red Onion
Arugula Lettuce
Tomato
Flank steak:
Season with Salt & pepper and rub with a little garlic then grill till its medium rare, remove and cool off. Do thgis the day before.
Duxelles:
Take an assortment of mushrooms what you like and then slice them, in a hot pan but butter & olive oil, garlic, copped onion and saute the mushrooms, cook them until the moisture is cooed out, then deglaz with red wine, and and repeat. The cook till dry again use salt & pepper to taste.
Take this and put into the cooler to cool off (do the day before)
Now its time to make the Sandwich:
Assemble all the ingredients, and start creating it, put some meat on it, some of the mushroom mix, lettuce, tomato, slices of red onion spread a little Mayo on the top, cover it all and enjoy..
