This weekend, at our Emo's Eating Emporium, we're having 10 people over for dinner. Summer is coming to an end so I thought I'd prepare a meal we could eat indoors or out, weather depending
To begin, I've chosen a Shrimp Salad which has me intrigued as it combines cinnamon, coriander, chili flakes and mint with fresh lime juice, served in a martini glass! I've never tasted it before so I'll let you know but it sounds pretty tasty, doesn't it?!
For our main course, we'll be enjoying individual Pork Wellingtons. I've made beef and I've made salmon wellington but I've never tried pork so this will be fun. I'm already marinating the pork in sherry and soy so it will be quite tasty on its own. Around it, there will be garlic and chili spinach, goat cheese, and prosciutto encased in puff pastry. A lovely wine and mushroom sauce will be on the side. I'm hoping it will look like this one :)
I've always had tremendous responses to my individual Wellingtons so I hope my guests will love them as much as I do. (don't tell anyone how simple it is because it always looks pretty fancy!) The great thing about them is there is no fuss when your guests arrive; everything is done in advance and then you just pop them in the oven.
Accompanying the Wellingtons will be fresh new heritage baby potatoes and baby Bok Choy. Very colourful!
Of course, no dinner would be complete without a dessert. I'm making a luscious lemon cake which should look like this (after all there is a birthday involved so we must have cake!)
So that's the plan . . . I'll let you know how it works out.
