365 Days of the Celebration of Food Day 22, Sweet Potato Casserole, With the cool night that will be creeping in we need something that is a little fun, relaxing and easy to make. This is a dish that you can make on a Saturday or Sunday then have it on one day during the week.
365 days of food to help give ideas for people in a hurry, want an elegantmeal, and holiday meals (that is coming). This Sweet Potato dish will help you and put some carbs in you.
Here is what we will need:
7 medium size Sweet Potatoes (cook these till they are tender, cool & remove the skin)
1/2 cups of flour
1 egg yolk
2 egg whites whipped to small peaks
1/2 stick of Butter
1/2 tsp Cinnamon
1/4 cup Brown Sugar
1 pinch of Nutmeg
In a mixer you will need to add the the sweet potato and 1/2 stick of melted butter 1/2 cup of flour 1/2 tsp of the cinnamon, 1/4 cup of brown sugar and the nutmeg and 1 egg yolk. Mix the ingrediants until all ingredients are mixed well. In then start to add the whipped egg whites slowly and fold them in. Then put mixture into casserole dish.
Make the topping:
In a bowl mix 1 stick soft butter, 2 cups flour, 1/2 cup brown sugar, 1/2 tsp cinnamon and then start to hand mix the ingredients. you are making a crumb topping. The pour this on top of the casserole and bake at 375 until the topping browns.
