Fresh Pumpkin Bread - Delightful Smells in your Home

You see pumpkins everywhere this time of year. If you have never tried pumpkin bread from a fresh pumpkin, then you should try this recipe.  It is very simple and will take no more than a half hour of your time (plus baking time of 1 hour).  And as an added bonus, your entire home will smell of fresh baked pumpkin for days to come.

 

Fresh Pumpkin Bread

1 cup butter or margarine, softened
3 cups sugar
3 eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 tablespoon baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground cloves
1 1/2 teaspoons ground nutmeg
1/2 cup pecans (or other nut of your choice)
1 (16 ounce) can solid pack pumpkin
 
Directions:
*Pre Heat Oven to 350 Degrees F
1. In a mixing bowl, dream butter and sugar. 
2. Add eggs and vanilla extract. Mix well. 
3. Combine dry ingredients; stir into creamed mixture just until moistened. 
4. Stir in pumpkin. 
5. Pour into two greased 9-in. x 5-in. x 3-in. loaf pans.
6. Bake at 350 degrees F for 1 hour or until bread tests done.
