I just made up a new recipe that I want to share with my friends. Not all of you will want to bake a pumpkin and mash it to get the goodness out of it but that is what I did. If that is too hard, use canned pumpkin.
Start with 1/2 cup shortening.
Add 1/2 cup brown sugar and
1 cup sugar Cream together.
Add 1 egg and mix.
Add 1 teaspoon vanilla
1 1/2 teaspoons cinnamon, 1/2 teaspoon ginger, 1/4 teaspoon cloves and 1 teaspoon salt, mix.
Now add 1/2 cup mashed cooked pumpkin and mix well.
Next comes the flour. 1 1/2 cups will be good. I use whole wheat but white is fine. Add 1 teaspoon baking powder before mixing it in. Mix half the flour and then mix the rest.
Lastly, add 1/2 cup finely chopped pecans.
Now bake at 350 degrees for about 15 minutes.
Enjoy! They must be good for you, they have pumpkin in them, right?
