Thanksgiving Pie Crust - No Rolling Pin - No Problem - This One Needs No Rolling

Happy Thanksgiving - Here's an easy pie crust recipe to be thankful for because it requires no rolling and it's so much better than store bought!!!

My Father taught me how to make regular pie crust so I do know how to make it -

-  But I know many don't even own a rolling pin as I found this out when, a couple of years ago I was to make a pie at a friends house and he owned no rolling pin.  I ended up using a huge candle and it worked but then made up this recipe!

My kids tell me I should be a Chef instead of a Real Estate Broker! - Maybe they are right or maybe they just want me to cook more than I get the chance to!!!

 

No-Roll Pie Crust
makes 1 9-10 inch pie crust
1 1/2 cups all-purpose flour
3/4 teaspoon salt
2 Tablespoons sugar
1/8 teaspoon baking powder
1/2 cup 8 Tablespoons frozen butter that has been grated on a cheese grater or very cold butter cut up

1 Tablespoon cream cheese at room temperature - (Optional)
2 Tablespoons cold milk, 1/2 and 1/2 or Cream

For variations use some ground nuts in place of some of the flour.

 

Place all ingredients in a mixer and mix with dough hooks until it's crumbly.  If you don't have a mixer just use forks, it takes longer but can be done.

Press into the pan then, place the prepared crust in the freezer while you preheat the oven and prepare your filling.

Jane - The frozen butter is the trick!  I own a marble rolling pin but do not use it as often as I might like.  There is something very therapeutic about rolling dough--I always find myself singing as I bake.

Your receipe is a keeper (and a time-saver).

Hi Jane -  my current countertop/worktop is not conducive to good rolling so I also use a Pat-a-Pie Crust.  I taught my husband to make it and now he is in charge of pies because of course 'men are far better chefs"  (I'll continue to allow him to think this if he continues to make the crust - tee hee)

Jane I'll have to pass this along to the cooks in the family (for which I am not one).  Why can't you be a chef and a Realtor?  There's got to be an idea in there somewhere to incorporate this into your business.  I see a tv show in your future.

Hey!  I like this recipe and I am going to use it for my Christmas pies...thank you, Jane!  This one is so easy, I think I can give up my usual Pillsbury crust (yes, I cheat, lol)! I hope your Turkey Day was fabulous!
