I just finished eating something that bears repeating via a post.....It is nothing new, but if done correctly can add up to one of life's little pleasures...It's tasty, filling, smells good while cooking, looks good and does satisfy the inner cave-man or woman craving for the basics...

A SAUSAGE SANDWICH

Stay with me here. I was raised in a Jewish Italian neighborhood. The Italians have a strict and devoted love for a good bread...a crispy bread even called an Italian bread...It is hard on the outside and soft and chewy on the inside. It has the flavor of a deep, rich bread taste and pleases the tongue and the jaw as well as the mouth..

Please be advised that if it is not rubbing ever slightly but firmly across the top of your mouth where the roof is when you bite in, then you have not attained the experience. In addition, this real bread, this true bread gets harder with time making it even more desirable for dipping, scooping, and holding cheese or olives...

As to the Sausages, this is a matter of taste and is pleasing to the one who chooses his favorite. For me, it is a spicy Italian Turkey sausage which happens to be lean. I usually pan fry these babies in a little extra virgin Olive Oil.., brown some onions, add some garlic for the slight kick and bite as well as an aroma that sends men to war...

These sausages end up cooking well and when all the flavors have peaked and combined....the above bread is waiting to receive the final play. It is mindful to make sure that the sausage fills the bread and where there is empty space, load and stuff with the onions. You want bread, meat and onions in every bite...to the end.

Toward the end of the sandwich..actually right about the middle of it....all the juices from the filling have now infiltrated the bread from the inside. The white cooked soft dough is now covered with the juices of the creation. As you near the end, you can almost experience an explosion within the mouth with the last bite....

The smell while cooking is almost a reward unto itself. Do not rush this part...draw it out and sip a little of your favorite drink while your nose pleasures itself. To gaze a ready to eat sandwich before biting takes the breath away and.... rightfully so as you will be doing quite a bit of pleasurable chewing. This chewing promotes explosions of flavor and at the same time let's the brain notify the body that it is in a first stage sort of SHANGRI-LA state and to relax....there are many bites to go

I do not require anything else on the above sandwich. It is meat, bread, olive oil, garlic and onions...I refer to it as Bible food for it has roots that go back and was a great way to close the day after your work.....At your discretion, you may add to the above....but be it known that this is a one of life's finest and simplest pleasures

Richie,

I moved to Maryland in 1991 from the NY/NJ area and haven't had a good loaf of bread since. Reading your post this morning made me want to cry.

Rich.....a good bread is no joke and is to be respected........Your comment proves that.....Oh, we can get by, but be advised on what is out there.......May you and a good bread find each other....soon

Glenn....a good man who likes Richards and good bread........makes for a good neighbor

Karen....that's the idea....This type of meal promotes silence while eating, lowers the blood pressure and supports feelings of well being....it is called CONTENTMENT........

Be advised that the pleasure factor goes goes up considerably when you partake of any food with a genuine, well deserved..... hunger.

Richie...Great descriptive post...One of my favorites is a summertime treat...Bread of choice, slathered with mayonaise, a 1/2 inch slice of a homegrown, garden ripe, big boy tomato topped with a quarter inch slice of a sweet Vidalia onion, fresh ground pepper and kosher salt...It crunches so nicely when you bite into it, tomato juices mix with mayo, stuff dripping off the corners of your mouth...Numerous paper towels or napkins...Good eating...Enjoy your day.
