Tortilla Soup Recipe

I love a good Tortilla Soup, but rarely like what is served at various restaurants.  Amazingly enough, this quick and simple recipe which I got from my daughter, is one of my favorites.  (Quick and easy doesn't hurt either!)  I don't know that it is "an original" -- for all I know, it may be on the label of some can of soup.  I think she got it from a friend.  Hope you will try it.

Tortilla Soup

Ingredients:

Tortilla Chips or Restaurant Style ChipsTortilla Soup

19 oz. Can of Wild Rice & Chicken Soup

10 oz. Can of Cream of Chicken Soup

1 can Rotels

1/2 cup Frozen Corn (optional)

Shredded Sharp Cheddar Cheese

Avacado (optional)

 

 

1)  Heat Chicken & Wild Rice Soup (19 oz. can).

     Mix in Cream of Chicken Soup ( 10 oz can)

     A dd Rotel Tomatoes

     Add about a half cup of frozen corn if you want.  (Optional)

 2)  Slice Avacado in to wedges  (Optional) -- and set aside.

 3)  Break tortilla chips in the bottom of serving bowls (break into large pieces, not too small).  Or you can use corn tortillas. 

 4)  Spoon the soup into bowls over the tortilla chips.

 5) Top with shredded sharp cheddar cheese.

 6)  Arrange the Avacado wedges on top of the cheese. (Optional)

Joyce thanks i love Tortilla soup and will give this a try.  I am the only one in my family that eats this.  I don't care for avocados but the rest is fair game.

Sounds good and worth trying. I had tortilla soup for the first time a couple of years ago and I really like it.

John, If you are just cooking it for yourself, at least it will be quick and easy.

Paul,  I love it too.  Most of the restaurants fix it a clearer version; I just happen to like the thicker version, which adding the Cream of Chicken Soup accomplishes.  Hope you try it and like it.

Most of my recipes come from someone else, or a cookbook.  I don't really have any family recipes, I wish I did.  I don't think it's appropriate for me to re-print something from Betty Crocker or Pampered Chef, so you probably won't see anything that is actually mine.

Donna, I really love recipes and cookbooks, although I don't have a lot of time to cook up new recipes.  If they are quick and easy, I will though.  A couple of years ago, I started a cookbook (one for each of my two daughters) -- it's a white binder with a clear front and I put the recipes in clear page protectors.  I need to get back to it as I haven't worked on it in awhile.  I'm trying to make each page colorful with a border and a photo of the recipe when possible and designation of where/who the recipe came from.  It's mostly recipe favorites, regardless of where they came from.  Let me know if you come across any that are quick, easy and wonderful.
