Gateau au Fromage Artillerie Club -- A Recipe for a Famous Cheesecake

The Artillery Club, hidden among massive oaks trees and oleanders on Galveston Island, is the oldest men's private club west of the Mississippi.  It was incorporated about two years prior to the Civil War for the purpose of protecting the Island.

Since 1865, the Artillery Club has been a men's social club.  Membership is limited to about two hundred.  In addition to presenting debutantes each year, the club also has held its own Mardi Gras celebration, including appointing a secret king and queen, since its inception.

For as far back as I can remember, my family, including me, has been members. This recipe, although elaborate to the taste, is simple to prepare.  Keep it covered and refrigerated for thirty six hours before serving.

                       Gâteau au Fromage Artillerie Club

                       Artillery Club Cheesecake

¾ cup         Brown sugar
3                8 oz packages of cream cheese
2 ½ tsp       Ground cinnamon
1 tps           Vanilla extract
3                Eggs
1/3 cup       Sour cream

Blend cream cheese, sour cream, brown sugar, cinnamon and vanilla extract.  Then continue to mix, adding one egg in at a time.  (I use the bread batter whip on the KitchenAid mixer).

Pour the mixture into a graham cracker crust and bake at 325 degreed for about 45 minutes.  Take out and let set until pie reached room temperature and then chill in the refrigerator.

This is a excellent holiday gift for clients and friends.
