For motorcycle enthusiasts, New Jersey, especially South Jersey (the Coastal Plain area), has some great scenic and fun-to-ride roads that make for great day or half-day trips.  (For example: Motorcycle Roads / NJ, Touring Hunterdon, NJ, NJ Motorcycle Meetups by City)
 
If you enjoy motorcycling in the company of other motorcyclists, then there are numerous motorcycle clubs and events for which you can take part (New Jersey Motorcycle Events, more NJ Motorcycle Events, and even more NJ Motorcycle Events).
 
If you're into antique motorcycles, then you'll want to check out New Jersey chapter of the Antique Motorcycle Club of America.

My personal favorite thing to do in New Jersey on a motorcycle (and also in my Jeep) is taking a trip to the Wharton State forest and Batso Village area.
