With a blanket of winter white outside and the holidays on our doorstep, I asked Craig Gildersleeve to visit on my Thursday noon show, Speak Up North Idaho, broadcast on KSPT and KBFI in Sandpoint and Bonners Ferry, Idaho.
I asked Craig what the most popular items for fish are this time of year. The answer came quickly: Dungenous Crab. While these most delicous crustaceans are sold year-round, but 80% are purchase in December and January, according to Craig. He told me that while frozen Salmon still sells well, other favs are ling cod, oysters, and petrole sole. He said you will find ground fish this time of year.
A popular Thanksgiving and Christmas item is salmon, whole or half, grilled or broiled.
We talked about the Salmon runs, beginning with the Copper River Salmon in May. I asked him his favorite, and he said with no ambiguity: King Salmon.
I am doing the Lifeskills NW communications class for my third run right now and saw a video recently there on the best foods for your brain. Among them were walnuts, avocado, and first and foremost was Salmon.
Craig has been around these parts forever, and he has had many roles here, including a full-service, sit down fish store and cafe, and managed Cedar Street Bridge back in the day. It was Craig who told me, on a show long ago, about how a peculiar saying came about. It seems that about twenty or so years ago, the Chamber of Commerce wanted to do television advertising in the Spokane region promoting Sandpoint. Part of the ad stated, "Where are the best restaurants in Spokane? Sandpoint of course." Ever since the saying has stuck around, though most don't recall where it came from in the first place.

While I don't necessarilty agree with him, Frank Wilkins has this list on his website, and he makes It's a Wonderful Life his #1, and White Christmas his #4.
White Christmas is one that is near and dear to my heart, and has some local flavor. See, the star, Bing Crosby, was born in Tacoma, WA and grew up in Spokane. In fact, there is a performing arts theater in Spokane named after the popular crooner.
"White Christmas" is an Irving Berlin song reminiscing about an old-fashioned Christmas setting. According to the Guinness Book of World Records, the version sung by Bing Crosby is the best-selling single of all time, with estimated sales in excess of 50 million copies worldwide. (Taken from this Wikipedia page) The movie came out in 1954, but was a loose remake of the Bing Crosby/Fred Astaire 1942 movie Holiday Inn.
How to lose weight during the Holidays
So, during my hour-long conversation with Craig we talked about the health aspects of fish, and during that talk the subject of holiday weight gain came up.
There are many ways to keep the pounds off, and among the best ideas were drinking water, taking a 10 minute time out when the urge to snack happens, spiking your meals with salsa or other spicy condiments, staying away from sodas, and upping your protein intake.
